    Histamine as Trent's mentioned also popped in my head as a possibility. Trent's gave excellent details. 

    Do not get overwhelmed initially with the inconsistency you may discover online for histamine lists. One can find differences regarding histamine lists. Most have to identify their particular triggers. As Trent's mentioned fermentation, old, overly ripe, aged etc is the avoid that is the initial start.

    It is unfortunate this happened to you. Now years later your frustration and anger comes through. How challenging and hurtful to you. From you description they were quite dismissive to you.

    I commend the love your parents have/had for you to sacrifice to insure your safety during high school by sending a safe meal. I know some school districts have a nutritionist on staff. This does not sound to be a factor in your case. It sounds like  the staffing in the food services dept in your case did not understand your condition and lacked training. 

    May I suggest for you future blog readers (your posts may help) that in addition to sending a lunch like your wise parents did, they ask to speak to the nutritionist of the district (who maybe at an administration building not in the lunchroom). As she or he would be more likely to know what celiac is and train / oversee the service food prep staff.I

    However even if this occurred for you (which it didn't) it is likely your parents still would have sent your lunch to ensure your safety, not knowing if the lunchroom staff could keep you safe.

    This is really helpful info for us on the message boards. I was never diagnosed with anything like this, but definitely have had problems with vitamins d, b, mg, and electrolytes after the challenge, while healing, or in the weeks after an unfortunate cc event.

    On goodness Ennis the building being sold  is tough at this stage when you are trying to get you catering truck up and running. I do hope that this all works out in your favor. 

    Losing nutritional yeast that's also a hardship as I think you often used it in your regime. The things many of us do to keep the body happy.

    On my end I have begun to react badly to fragrances, and freshners more than ever before. I know it sounds odd to most.  I passed by someone shortly after they sprayed some Axe body spray aersol. The migraine/vestibular migraine symptoms hit before I actually smelled it was a fragrance, I have been trigger sensitive since. I asked what they had sprayed so I could avoid it in the future. I then reacted to my Dentists office air freshener and had to step outside although my symptoms took off and didn't cease despite it being removed.

    I hope things improve for you home and work wise, and both of us find some new found health stabilization for the spring.

     Indeed. Amazing you finished 4 weeks. 

    I cried and said  before attempting I didn't think I could finish a 2 week challenge. I attempted and had all of my gi symptoms, brain fog, neuropathy etc.I had to pull over often for nausea and bowel then stopped driving all together during my attempted challenge. I would walk to my local bakery to gluten myself. As my challenge went on the darker and nihilistic thoughts were awful. I stopped at 6 days stating, I have 2 kids I need to finish raising and a spouse that needs me to help raise our kids. I really did want a final Farwell to a Chicago deep dish pizza and a Chicago style hot dog, but the challenges revealed  what my husband and I already knew.

    Wonderful news on the healing Ennis! What a wonderful thing for you.

    Other than the immediate family it will be quiet here on Thanksgiving. It was challenging the past few years (at first to accept), but I learned to embrace it.

    I do hope you have a few guests for dessert perhaps, or a peaceful evening of good health, all your own, to your well-being.

    It's unfortunate to hear you are struggling at this time. I hope you find some comfort and peace soon. Hopefully, you got through your busy summer farmers market before this erupted. 

    The liver jerky is a clever way to ensure you get your nutrients since the veggies are troublesome these days. The rancher/all meat processor is a golden find.  The salmon dill sounds delicious.

    Thank you for letting the community know of recalls. I for the most part find in healthiest avoiding processed foods even gluten-free  ones. I do what the immune system says, but this info is helpful to know to stay safe.

    Sorry to hear of the Dr billing situation. I read a book last month (since you are talking about reading) that delves into healthcare and billing. It is titled An American Sickness by Elisabeth Rosenthal . She is a MD and and award winning journalist. She discusses the emergence of a la carte billing like you describe. It may not be your type of read, but maybe your local library or their ebooks selection has it and you can skim it to see if it would be helpful. My reading can be eclectic. It sounds like you are doing all you can on your end, but maybe something in the book may give you some others ideas/tools to negotiate this new bill should it become an issue.

    Your food selections sound yummy and I am sure it is hard to determine your crowd flow. I hope you get good weather and hungry folks at the next farmers market.

    You're making progress with the business. Interesting the new is 4k and used 2.5k . I would have thought it would be a better deal used. Steeper discount. Sounds like you figured out how to trouble shoot the windows display in your favor.

    As for me Midwest weather is heating up and today I erupted in patches of DH.? No cc exposure I am aware of as I know of. I've read on the forums here uv and weather can trigger DH flare even if no diet exposure. This may be true for me too.

    I eat only at home. This happened last Summer too July seems to be my vulnerable month weather wise. Mind of its own. I look forward to a summer when my DH decides to go in remission. That'd be great.

    Edit: was not weather my error. I discovered the slip in of gluten people refer to rum Bacardi Superior some celiac sites say all Bacardi is safe but Silver. Bacardi doesn't call Superior "silver" however it is listed next to black and gold and has a silver label. I had a drink with superior which sadly I now know is nicknamed silver . Hard lesson and a ruined blender.

    Most of us have had similar thoughts and feelings to you about the aisles we don't bother going down. On some level I appreciate they are all in one place. As Ennis said in time we make our own recipes etc.

    My children and husband can eat gluten free items from the store. I have found my immune system likes me to make my own bread and pizza items. In time some interesting changes happen. We find new recipes to love. My immune system likes the least amount of additives etc. It likes whole foods and simple ingredients . 

    My daughter likes my homemade gluten-free pizza crust better and my homemade milk free Mac and cheese over any companies gluten-free packaged version. She still gets some versions to keep in the freezer or pantry in case mom is tired after work and can t make the homemade version.

    I missed foods and had to adjust to the social aspects of the lifestyle change. It also changed my family's lifestyle. A compete over hall. My Dr's let us know the shared household was not working for me. So my daughter, son, and husband went gluten-free too. While they can eat gluten outside the house my children have found they prefer to be gluten-free even away from home. My husband eats gluten-free away from home too except for beer. They did It because they saw how bad gluten is on mom. I can't put into words how in addition to adjusting to the lifestyle, diet, and grieving foods I lost, how it felt to take the foods from them too.

    In time it became a lifestyle. My daughter likes to try new recipes and eats better than most teens. Even My son's friend who spends a lot of time here adjusted too.  My son's friend loves the days we have fresh squeezed orange juice at our home. My husband will give friend a 30 second old fresh glass of oj .We are unique in these lifestyle changes.

    In time you will adjust. It is ok to mourn. You may also find more "non cardboard" options or try an Ennis recipe to add to your food options.

    Welcome and best wishes on this new path in life. Most of all I am glad you know now and can avoid any further complications due to undiagnosed celiac.

    Sorry to hear about the tooth Ennis. That is a bummer. I am glad to hear that things are improving with your hard earned fitness routine - great news. The change of seasons and farmer's market arrival also gives you the opportunity to increase exposure and income for your pending food truck  venture. Good luck this season.

    Oh no Ennis! I am at a loss for words. Other than I am thinking of you, and hoping something somehow happens to make your dream a reality.

    It is not a consolation, but I read recently how many Chicago based food trucks are struggling or owners have to put them out of commission due to regulatory issues too. Not exactly what your facing, but your industry is a challenging one. Too soon to tell how this will go in Chicago.

     I sympathize- I got cc in July have DH some tremors and ataxia since (yes -the DH  that was a no show for my challenge ?) 

    Rebound soon. The food sounds yummy despite the toll the issues surrounding job is taking on you. What a professional to soldier on .

    I m glad you are making you dream come true. Wonderful news.

    The non celiac working in your food truck if a professional you hired, screened , and trained, I would be comfortable with if he\she did not bring food to work as Karen mentioned (ate meal from food your truck on shift). Your new food truck your knowledge,  best practices in good prep, and celiac status\knowledge is valuable.

    I like many of the food menu options you mentioned. The garlic coconut secret veggies stir fry sounds yummy. I would imagine at a town festival I would try the fries with your homemade vegan chilli or some homemade vegan  cheese. It would allow me to stay longer at the festival. Anything that is a treat for me that I often don't have time to make myself regularly is nice. Cheese is one i don't often make myself due to time.so something safe cheese. Breakfast on the go( if I woke up late) English muffin with bacon treat☺

    My kids and I watched a show recently where the business has a bacon "flight". Los angeles? A variety of changing \rotating bacon flavor\slices looked good. Maybe a best of Ennis flight from a signature item\something your catering business was known for would be fun. A staple flight but varies based on your fresh local ingredients . Also I would find the true paleo marketing refreshing as some paleo inspired business derive sugar ingredients  from corn then remove proteins etc but not true paleo. Or safe for me. This is now something I call on with a new paleo product as I discovered this variation in marketing labeling terms.

    Overall I would hope your customers enjoy your food for what it is and your talent. May you get folks from all  walks of life celiac, paleo, and normal folks. Prosper
