Yes. I am considered NCGS many of the symptoms you describe fit my reaction to gluten. Additionally, I was put on an elimination diet after my gluten challenge for other culprits. I also jump on the intolerances. I had up to 13 for 2 years . I consistently have to avoid 3 now. Gluten, corn, (especially starch and corn and corn starch derivatives) , and cow milk. Correct, but some of us were diagnosed in past as such based on symptoms only without formal testing for either condition. So for some of us in a certain age bracket this did unfortunately occur. I took my cats gluten-free. I feed my cats grain free. The dry foods are grain free and dedicated lines.
