That's great, Nini! I love Carleigh's teacher too. They are going to make a friendship soup in the crockpot at the end of the month. She wants everyone to bring a cup of veggies or something to contribute. She emailed me today for input on how to keep her safe. -

My dd likes the Ians' fishsticks, but doesn't like the chicken nuggets. I also have a chicken nugget recipe that is pretty good. I make a bunch and then freeze them in individual portions for her. Much less expensive that way too! -

Dora Cinnamon Stars is the only cereal I buy at the regular grocery store due to her other allergies. Others will have more input there. I also buy fritos, plain potato chips, mini-marshmallows, applesauce, canned fruit, frozen veggies, frozen fruit for smoothies, OJ, dairyfree margarine. Tapioca Starch is much cheaper there so I get that there... -

Elaine ~ we are on a pretty restricted diet. When you say he's fussy, do you mean picky? Carleigh's typical breakfast ~ grits, fruit, toast (homemade bread). She sometimes also eats some cucumber, green pepper or fresh green beans. Lunch ~ leftovers reheated in a thermos or plain meat, Glutino pretzels or plain chips, fruit, cucumber or green... -
Hi Liz...just wanted to chime in here.. My brother and SIL have a bunch of dogs. Most of them are chihuauas (sp?) but one is a pit bull they fell in love with at the pound. This is our 2nd gluten-free Halloween, but Carleigh's whole life has involved the trading of candy because of the other allergies. Yep, Carla's right about the potatos... there are 2 different kinds. The potato ROUNDS are safe! Every time we've eaten there, the manager comes to the table and actually goes back to cook the food himself. And, they always check back with us several times to make sure her food is ok!

I love my crockpot too! My son loves Italian Roast ~ Brown a chuck roast, throw it in the crockpot with a jar of spaghetti sauce and cook on low all day. Serve over tinkyada pasta! We love quinoa. As the first person posted, make sure to thoroughly rinse it. I always cook it in chicken stock and have served it with sauteed veggies. One time I threw all the leftovers of rice, quinoa, black eyed peas and melted some cheese on top for a lunch and it was delicious! -

I do the same.. I use a modified Carol Fenster blend and sub it 1:1 for flour. I have not used sweet rice flour though so don't have the comparison. Linda ~ I also have good baked potato soup recipe that I know works, even with Carleigh's restrictions. -
My dd loves them too! I pay about $6.99 a bag too. Crazy!!

I have a couple recipes that call for Cream of xx soup. I've been making my own . 3T. butter or oil 3T. flour blend 1 1/4c. chicken broth (or milk if you can) salt, pepper Melt butter/oil in saucepan. Stir in flourand seasonings. Cook over medium heat until bubbly. Add liquid slowly, stirring with whisk to get rid of lumps. Cook until thick... -
I found tapioca starch in the asian section of the grocery store... and it's much cheaper than the health food store.

My favorite egg replacer is 1 1/2T. water, 1 1/2T. oil, 1 tsp. baking powder = 1 egg. It works well for up to 2 eggs. I have also used 1/4 c. applesauce = 1 egg

I use the same recipe as Linda's MIL! You really can't tell the difference. I have made them over and over.

My kids have been liking Tater Tot Hot Dish (Casserole). Brown up some hamburger meat with your favorite seasoning and diced onions. Mix hamburger, green beans, corn or whatever veggie you like with the soup and top with tater tots. Bake at 375 for 45 minutes.
