  1. Hi... I live in a southern 'burb of Minneapolis. I'll have to check out that rock site. Lisa, glad that you are back on track and starting to feel better now. We don't really eat out very much. The one place that we have had good luck at is Outback Steakhouse. We have tried other restaurants, but she always complains that her tummy hurts after wards...
  2. Just wanted to update this thread.. We just got back from the Ft. Lauderdale, FL area... We ate wonderful gluten-free pizza and a brownie at Pizza Fusion in Deerfield Beach. They do need a bit of notice for the gluten-free pizza crust. And they only have a few outside tables to eat at. But it was wonderful! Carleigh loved it! We also ate...
  3. I made my normal bread recipe and put in the 1 tsp. cinnamon and 3/4c. brown sugar. Carleigh is loving it. I made it in the loaf form cuz it's not dough-y and thick enough to make the balls.
  4. I do this too with Tinkyada Little Dreams pasta. Even my gluten-eating son likes it.
  5. I made thse cut out cookies a lot last year. The last 2 times I've made them, they are not keeping that crisp shape. The only thing I can figure is that I used to use Crisco and have changed to Spectrum Shortening. Anyone?? They still taste amazing, but I need a Christmas tree shape for Carleigh to take to school!
  6. I bet that would work, Julie... I was thinking about Monkey Bread last night cuz we usually have it on Christmas morning! I don't think my bread recipe will work because it's too thin to make balls. But, if yours is a thicker consistency, it will probably work. I'm just going to add cinnamon and sugar and make it in a loaf.
  7. He is precious!! It's great that you will be able to help her too!
  8. Hi Blue ~ My dd also has trouble with rice. She is doing fine with sorghum flour, though. I just substitute sorghum for rice flour. My favorite blend is a modified Carol Fenster blend. I use 1 1/2c. each for sorghum flour, potato starch, and tapioca starch. Carleigh loves the banana muffins at www.savorypalate.com. The bread recipe I use is from...
  9. That was a great list... I'm not a fan of the Ener G egg replacer either. I use it in a few things. My favorite egg replacer is 1 1/2T water, 1 1/2T oil, 1 tsp. baking powder whisked = 1 egg I use that the most. The bread recipe I uses has 2 eggs that I replace that way. It also has gelatin in it and extra baking powder.
  10. I would say to divide the dough in half or quarters and wrap/refrigerate. I read at a website a few months ago about this: take out the divided dough and roll between parchment paper on the baking sheet. Cut out shapes, BUT LEAVE THEM. Put the whole sheet in the freezer for 10 minutes. When you take it out, it's easier to separate and deal with the cookies...
  11. ((Patti and family)) ~ prayers being sent up for your BIL and sister and the whole family.
  12. Congrats!! I'm happy for you!! Someday I will have success with cake too... I just haven't found the right recipe yet with all the other restrictions.
  13. Wow... sounds like you're doing pretty good if you can get it to come out in a regular loaf pan! I had to start out with muffins, then mini-loafs and now use a regular loaf pan for the bread recipe that I make. I also cut bread creatively, like Richard suggested!
  14. I have made rings from aluminum foil for buns. They work great!
  15. I made Carleigh's pretty much the same as Patti. I baked her the bread I usually bake and toasted the cubes in the oven. I added sauteed celery, onion and cooked it in homemade chicken stock. She added garlic salt to it.
  16. We use the Lil Critters Gummy Vites, like Nini. I buy them in a big bottle at Sams Club.
  17. Good luck tommorrow! I would explain to her that she can't get up in the night and get any food or the biopsy will have to be done again. Also give her a nice snack before she goes to bed, I guess.
  18. Congratulations!! Can you post the recipe for the coconut cake? Sounds yummy!
  19. Everyone's dinner sound great!! It was just our family yesterday. We had: Range Free Turkey Stuffing (made with Bette Hagmans Sorghum Bread) Regular Stuffing for us Gluten Eaters Mashed Potatos (made with Dari-Free) Mashed Potatos (made with milk) Green Beans Store bought rolls gluten-free rolls for Carleigh Store bought pumpkin and...
  20. ((HUGS)) ~ You can do this!! We've been gluten-free for a year and I baked many door stops that would break a window or sink or just plain taste disgusting. My dd also has an extensive list of other allergies. I agree with Guhlia about baking in small pans. We took bread away for a few months so she could "forget" what wheat bread tasted like. And...
  21. ((Nic)) I am sorry that Jacob is feeling so crummy! I have been put over the edge by many things at times too. My 7 year old dd has many allergies and reacts to things differently. The gluten seems to cause the tummy aches, constipation or D, and throwing up. The other allergies seems to cause eczema. Her milk allergy is to the protein in milk ...
  22. My dd loves those snickerdoodle cookies too. I splurged and bought a case of those little snack packs to send to school for the birthday treats. Cost a fortune, but every one else gets what they want so I didn't want her to feel deprived.
  23. Guhlia ~ did this come out in a bundt pan?? I would LOVE that!!
  24. LOL! Pick me up on the way!! I've been wanting that pan too, but still haven't found a cake recipe to work for our extensive list
  25. Hi .. we also avoid egg. My favorite egg replacers are the same as Alex uses. I tend to use the oil/water/bp most often though. I still haven't found a cake yet though. Hi Alex... you're over at KWFA too, right?
