  1. I have noticed a lot of dressings contain gluten....especially if they are low-fat/fat-free. I buy all my dressings from whole foods because most of them will say if they are gluten free or not....or i just make my own dressing from oil and vinegar.

  4. The two things I miss the most are beer/ale and pizza. I tried gluten free versions of both and they just aren't the same. I ate pretty healthy before going gluten free, but I still miss my occasional junk food. And one thing that I would love to have is a cheeseburger with a regular bun.   5. I started having intestinal symtoms a year or two after having my son. I had some other symptoms for much longer though (such as dark under-eye circles and tonsillitis that wouldn't go away). I didn't think of gluten intolerance until my mom suggested it after I had intestinal problems for 6 months.
  6. But how do you know that the 60 controls were completely healthy? I wonder what percentage of the population really has gluten intolerance. I didn't have intestinal symtoms until a year or so after the birth of my son. I might have tested postive to the test before having any symptoms. (btw, I tested negative to the blood test but have had positive results...
  7. This is really interesting. My husband (who is Mexican) has stomach and digestive problems, but won't admit to it. I am going to try to talk him into getting tested by Enterolab. He was also extremely skinny as a kid (not anymore). Thanks for sharing that!
  8. I did a presentation on Celiac disease/gluten intolerance for my Anatomy and Pysiology class. A couple of people told me that it was very interesting and they learned a lot. One girl told me that some people in her family had it. That is great that a bunch of soon to be doctors will now know more about Celiac disease.
  9. I agree with a few others that suggested extending nursing. I never thought of bfing my DS to a year, but now he is about to turn 3 and he still bfs a couple of times a day. He was a picky eater for a while and sometimes would get most of his calories from breastmilk. If you don't want to bf any longer, than I don't think going to rice milk is a good...
  10. I have been wearing glasses since grade school (now I wear contacts) and every time I get my eyes checked my prescription is a little worse. I just recently went to get my eyes checked again (first time after going gluten free) and my prescription actually got a little less strong. I was really surprised because I thought it would get stronger. I wonder...
  11. I like to keep a couple of boxs of Thai Kitchen noodles in my cabinets for when I am not in the mood for cooking a meal from scratch. The meals are really easy....you just add some chicken, beef or tofu and veggies. The kids and DH really like them.
  12. mmmmmm.....I used to love Thai pizza before going gluten free. I never thought of making my own gluten-free Thai pizza. Someone asked about what to put on the pizza. The bar I used to get it from put cucumbers, chicken, red peppers and I think cilantro. You could also put a couple of slices of hot pepper on if you like spicy stuff. I think I am going...
  13. I know I get really irritable when I glutened. I already talked to DH about doing enterolab and he didn't seem against it. I will probably order the gluten stool test tonight or tomorrow. Thanks

  15. My son had blood tests done to check if he was gluten intolerant and the tests came out negative. I know the blood tests aren't 100% accurate (mine were negative and I know I am gluten intolerant). I would like to get him tested through Enterolab and see what the results are. He has been extremely crabby lately. Just crying and screaming for no reason...

I'm gluten free, but I'm so glad I don't have to give up Chocolate, coffee, peanut butter, cheese or any kind of spicy foods. btw, someone else was saying something about loving peanut butter....me too! I can eat it everyday (several times a day) and not get bored. I haven't been eating much bread lately, but apples and peanut butter are soooo yummy...
  17. I never use flour in my Alfredo sauce. You just have to use lots of heavy cream and cheese. It is really fattening, but really yummy! The cream should thicken as you cook it. Like someone else said check www.allrecipes.com. There are some great recipes there!
  18. I use corn starch. It works better than flour (I think at least). Just make sure you don't use as much corn starch as you would flour. There are usually recipes on the box that I go off of. Good luck!
  19. I had a quiche that was made with sliced potatoes as a crust. It was pretty good. I'm not too crazy about quiche anyway though.
  20. When I told my dentist I was gluten intolerant, she said "what is gluten? Ohhhh....like the stuff you make jello with?" At first I had no idea what she was talking about, then I realized she meant gelatin.
  21. Self diagnosed at 27 (about 6 months ago). My blood test came back negative, but I decided to try the diet anyway. I feel so much better now.
  22. Sometimes I feel like it is all in my head....until I get glutened and I realize how sick I was feeling. I thought it was normal for me to have gas all the time and be constantly tired. Now I realize that it isn't normal for me. I still get cravings sometimes, but they are starting to go away. It has been about 6 months since starting the gluten free...
  23. I really like the Apple Pie Lara bars. I tried the other flavors, but this one is the best. I always try to keep one in my bag just in case I get hungry. A good thing is that my kids also like the apple Lara bar. We usually end up splitting one between the three of us.
  24. I remember Costco was carrying wild salmon for a while. I haven't seen it recently though. Next time I go to Costco, I am going to ask if they still carry it. Wild salmon is soooo much better for you than farmed.
  25. I sometimes think about eating something with gluten (especially pizza), but I know it is not worth it. I have been gluten free for about 6 months and I slipped a couple of times on purpose. It just wasn't worth it. What is worse is when you get glutened and don't know from what. I always think "man for that I could have had a slice of pizza".....but...
