  2. The one thing I do miss from the gluten days is malt-flavored Ovaltine. I used to give it to me kids, too, and tell them that it was chocolate milk (because it has no caffeine, so it didn't keep them up). And they loved it. Sigh....We need someone to invent a Rice Malt Ovaltine!!!

  5. I read this differently. I don't think it's meant to be hard-hearted. On the contrary, it's stating as an unfortunate fact the kind of thing many of us here had to go through. It's a comment on the failure of our medical system. So many of us here ended up diagnosing ourselves because the doctors in charge did not even consider celiac as a possibility...

  8. I think there's something wrong with the directions. Notice it said, "bake 40 minutes or until done to the touch." Then it said something about sprinkling with sugar.   12. Most cake recipes that I've seen require butter or oil. Could that have been left out by mistake?

Xanthan gum helps enormously, even in recipes that don't call for yeast, hence its use in cakes, cookies, pancakes, biscuits, quickbreads, etc. I'm puzzled by the directions for 3 teaspoons of baking soda. First of all, I've never seen such a large amount called for in a recipe. Secondly, 3 teaspoons = 1 tablespoon. Why would they bother with 3 teaspoons...
  14. I've never tried it, but I do think very highly of Chinese medicine, as long as you have a doctor who understands that whatever he gives you must not contain gluten! I assume that you would want something that can help your gut heal and possibly minimize the effects of cc, right? You aren't looking for something to "cure" celiac so that you can eat wheat...

  17. Could it be gluten crumbs in your mixer? (Not in the blades, but up above where they attach--sometimes batter splashes up there and then dries, and then crumbles off when you make something else.) Besides for another food intolerance, what I was remembering was that until several months went by, all the gluten-free bread substitutes gave me bigger tummy...
  18. Oooh, how annoying of that doctor to say that!! You are quite right, because IBS is not a disease; it's a syndrome, which means it's a collection of symptoms. And those symptoms are identical to those of celiac. Usually, the doctor hasn't bothered to rule out celiac because they've been taught in medical school that it's a one in a million disease...

Exposure to sunlight (or cloudlight or rainlight, whatever the weather!) is what will help your body reset its internal clock. I have a Toastmaster, and both times that I tried to make gluten-free bread in it, it overflowed during the rising cycle, and I ended up with a half-burnt and half uncooked MESS.
