  6. Being the crazy baker I am, I would just substitute equal amounts of the gums. Some people suggested using plain gelatin in cake mixes. Because you have to substitute the sour cream with rice milk, you would be losing some texture. I don't have an exact amount for you to use. I hope some one who does this often will post and give you tried and trusted...

  8. Confused in Iowa, You are correct. When I first started looking into Celiac Disease it was 1 in 40,000; then 1 in 300; 1 in 133; and now new reports on celiac disease are 1 in 100. I don't know which study has proven this latest statistic. L.

  10. We have been eating the chocolate covered bars for about 2 years with no problems. I've had the peanut butter iceam and black raspberry sorbet with no problems. Avoid the obvious gluten products i.e. the ice cream sandwiches and any flavors that would be cookie dough or brownie whatever. L.
  11. I agree with everyone's advice. I have found that giving your child more control over the life style and choices of alternatives works for us. Let your daughter pick out her snack bag. Call ahead to the event, tell her what the menu is going to be, then say would you like this or that instead, pack some extra treats - in case the host forgot to tell...

  16. If the blood tests were elavated, they came back positive. I don't know how old your child is, but under 24 months is notorious for false negatives in Celiac testing. Get a new ped. gastro. I think it was very irresponsible for the Dr. to say probably not Celiac - especially without an endoscopy w/ biopsy and elevated blood levels. Get in touch with the...

  18. We should get the name of your neighbor, the doctor (who is absolutely correct in what she told you) and refer those who are going for testing in your area. L.
  19. Like Carolyn posted, just try the diet. If you have a positive response to the diet that proves you have some type of gluten intolerance. My test results came back negative, but I improved dramatically on the diet. L.
  20. I'm sure I will forget to tell you too much information, so I suggest you get the book by Danna Korn, Kids with Celiac Disease. It has information about the testing procedures and how to deal with the lifestyle change. We have many lists of safe foods, medications, restaurants that have gluten free menus, and other ideas for solving gluten free issues....

  22. It was a great segment! I got teary eyed too. We have two gluten free stores here in Mi., Celiac Specialties of Chesterfield and Bel Cibo, in Clawson. They also have eat in tables. Chef Andrew, Bel Cibo, will make you a hot fresh pizza and other entrees to go. L.

  25. You might consider private school. A religious school could provide scholarships, and not just for financial reasons. A smaller class size and very caring teachers can make a perfect environment for your child with celiac disease and the other allergies/intolerances. Home schoolers are joining together to hire tutors and extra curricular activities. ...
