  1. i use the namaste crust mix--and the key is use very warm water and mix it well in a kitchen aid mixer with the dough extension. and i don't bake it as long as they say before i put on the toppings. After toppings, i bake approximately 15 minutes. i like it because the crust is preseasoned, which helps make the denser texture more zippy.

  3. i've never purposefully cheated, but i've been not as careful sometimes--and even that is so not worth it! i don't get so sick that i can't function, but i lose two to three days of productivity and just feel yucky. so not worth it.

  6. i developed DH after starting the gluten-free diet. I don't notice that it's worse when i'm glutened, but it does flare with stress. Mine doesn't get oozy--only itchy.
  7. Not to crap on your plans, but are you going to be able to join with a celiac diagnosis? I thought it was grounds for a medical discharge?
  8. Currently, I teach schoolkids at a daycare--busy gearing up for summer! I have bachelor's degrees in psychology and biology, and in August, I'll start med school at the University of Arkansas for Medical Sciences. So, yes, another geek.

  10. i go to my local health food store or kroger and buy Bob's Red Mill gluten-free All-Purpose Flour. It seems to work well, and frankly, I don't have the time to mix my own gluten-free flour. Good luck!
  11. Being the only gluten-free person I know, I have had felt the frustration of watching someone else tear into a pizza or birthday cake, etc., but it's part of our life. The way I got over it was verbally telling my friends and family to enjoy the food they can eat, even if they have to eat it in front of me. Think about it--do you want everyone else to have...

    my bf and i spend between $35-40 with dessert. i love it--my favorite restaurant since going gluten-free.
  15. the magazine "living without" has an article about food allergies and celiac disease in the military in its most recent issue. the guy who was diagnosed was on submarine duty before diagnosis and was given shore duty since he was so close to getting out. otherwise, he would have been medically discharged.
  16. just be careful when you don't need the meds anymore. i was taking a small dosage of celexa to take off the edge pre-diagnosis, and just quit taking it when i the doctor told me i didn't need it anymore. i know better, but i didn't taper the dosages. instead, i stopped cold turkey. HUGE MISTAKE that culminated with me telling the bf that i needed a couple...
  17. i have similar issues when i get glutened. it's unpleasant at best (and hard to clean up, too). ick.

  19. i tried midol once, but the "mood enhancers" made me loopy. i'll stick to my ibuprofen.

  21. so sorry that you have been so sick for so long... and none of us know why they don't test for this. the good news is that you can start feeling better soon, although you don't want to cut out the gluten before being blood-tested. by the way, you have a great pharmacist!

    be sure to watch him closely until he acclimates to the cymbalta. it's in the class of anti-depressants that can actually increase suicidal thoughts. usually it's most pronounced in teenagers, but you can never be too careful. hope he'll come around some day. keep fighting the good fight.
  24. i had and still have occasional lactose intolerance since going gluten-free. i would cut out dairy in large quantities for a few months, then gradually reintroduce to see if the problems still exist. that worked for me. good luck!
  25. i work in a daycare, so here's the skinny. talk to the director and bring literature that clearly explains the care your child needs--and tell them that EVERY teacher needs to be informed about your child's needs. if the director does not immediately and actively work to fix this problem, absolutely remove your child. if the director tells you that they can...
