  1. plumago, there is absolutely no reason whatsoever to live in dread of developing refractory sprue. The hard truth is that most people diagnosed with celiac improve and then live perfectly normal lives. Living your life in paranoia is no way to live. richard

  3. Bottom line on your main question is that nobody can tell you how long it will take your system to "clear" if you have celiac or gluten intolerance. It IS safe to say that two weeks is not long enough for anybody, and it's also safe to say that in two weeks you haven't completely learned the diet and haven't completely cleared all possible sources of gluten...
  4. I'm not a Costa Rican food expert, but it appears their traditional cuisine is mostly naturally gluten free. Tortillas are traditionally corn. He could be going to a much tougher country. Do a search for Costa Rican food. richard

  6. I'm pretty certain that they don't really knock you out for tests, but they do give you a sedative that is an amnesiac. I don't remember my colonoscopy or either of my endoscopies. Now it's time for another colonoscopy 10 years later. richard
  7. I would definitely hate to hear that they're starting to put wheat in corn tortillas. I mean seriously, "they" already have their flour tortillas. Oh well, I still always read the ingredients, although after 10 years I have to admit that it's a little easier to forget. richard

  9. T.H., I was speaking to the fact that Fluffy had seen corn tortillas that said contains wheat. I'm quite aware that CC is a possibility, but my comment was I had never seen soft corn ones that actually list wheat. richard
  10. T.H., in 10 years I've almost never found sausage with gluten. Yet where you shop you say "many" of them contain gluten. Can you tell us brands or where you shop that they put gluten in a lot of their sausages? richard
  11. Strange. I don't have the names of the ones I use, but none of the ones in my store say they contain wheat. richard

    They use a lot of soy, or soy sauce? Soy itself is not a problem for celiacs (unless you are also intolerant of soy). richard
  13. Some people become even more hyper sensitive to gluten after going off it. richard
  14. Unless Kroger and Perdue and Holly Farms and other major producers are lying, the solution is usually just water and sodium and sometimes other non-gluten preservatives (which I try to avoid). I've yet to find one that has gluten purposely added, except once when I saw wheat listed in a Walmart beef. I'm talking about raw meats, not the ones that have marinades...

  18. Captain Morgan's is gluten-free. I've yet to find a liquor where the coloring contained gluten no matter what country it came from.
  19. I have a different view. I ALWAYS buy something from the first kid who comes to our door for a specific sale. Gluten or no gluten. Our kids used to sell stuff and folks who didn't need it bought to support the schools, sports teams, Girl Scouts, or whatever, so I do the same now. richard
