Don't know about the olive oil, but Bumble Bee, Chicken of the Sea and Star Kist are all gluten-free. The only tuna I've ever seen with gluten was a flavored one. richard -

I have no definitive research to show you, but in 5 yerars I can't remember finding an artificial flavor with gluten. In fact, I've almost never found a natural flavor with gluten. richard -

I can't remember which it is, but the tuna that clearly lists wheat is a flavored tuna (something like teriyaki), not the plain stuff. Vegetable broth might have soy in it, I don't know, but it does NOT have soy sauce. richard -

Don't know if this will help you, but all celiac experts and the NIH conference on celiac say that ALL first-degree relatives need to be tested. All of mine were, and my 70-year-old father with no symptoms was EXTREMELY positive. richard -

"I just threw out some gels that were sitting on my counter that were causing me to react every time I sat at the computer outside my bathroom door. There are glutens and wheat in everything. As with everything related to celiac, it depends on the person. My DH never came back even though I went off dapsone right after going gluten-free (this is very unusual, apparently). Others report problems months and months later even when strictly gluten-free. richard -

Shelf life of fish depends entirely on how quickly it's chilled and how cold it stays. Fish that's been in a store four days CAN still be fresh enough to eat, although you certainly wouldn't do sushi with it. When I buy "fresh" fish, I either eat it that day or freeze it immediately. richard -

Full panel where I live in the U.S. (western Virginia) is something like $250 if you pay out of pocket. I have work insurance so I paid very little. Yours sounds like a bargain. richard -

One more thought on bleu cheese. Many folks, including those who make cheese, very seriously doubt that "gluten" would even transfer in a culture grown on bread. And if it does transfer, the percentage of gluten in the culture would be miniscule and the amount of culture used is so tiny that the resulting gluten in the cheese would be so minor as to not be... -
Many people who go gluten-free and start healing become ravenously hungry. Your body is craving the calories and nutrients it hasn't been getting. richard

"Many perfumes also use grain derived alcohols in their processing. These can also cause problems for celiacs." "Grain derived" isn't usually wheat and is distilled anyway. Is that your dog in the photo? If so, does the dog food have gluten? I don't see any iodine in what you eat but iodine can aggravate DH until it's completely gone. Corn tortillas or the flour they're made with might be a problem. richard -
Given your rise in liver enzymes and all the other things you have going on, the only real advice we can give you is to be completely gluten-free. richard

All those canned tunas with "broth" are gluten-free. The vegetable broth is from just what it says -- vegetables. In fact, if you go to the website for BB, Star Kist, Chicken of the Sea, and other major brands they will tell you they are gluten-free. In fact, it's always a good idea to check websites. The only tuna I've ever found with gluten is one or two...
