Well, let us start with food issues, I tried meat again, I can digest them fine with pancreatic enzymes it seems the whole meat and fat issue was related to not having enough. Note you cook these in a Muffin tin or they will spread out to much. These are SUPER SOFT and MOIST and fall apart easy, depending on your almond butter you might have to adjust the flour. Thanksgiving changes and plans.

Well my idea of doing the broccoli dish with a mushroom duxelles flopped, seems the local mushrooms are still gluten contaminated Yes I tested them with a nima.....and stir fry mushrooms in the polar cans do not work so well with this version of the duxelles. So I saw a chiropractor today after noticing some nerve issues, neck pain and a spasm in my back. Enzymes

I have issues digesting foods, meats/animal fats, and certain other fats are a no. I just throw them up hours later, if it floats it will not break down and be puked up hours later, if it sinks as do nut butters, certain fats,  certain fish and crab, they tend to go through undigested in the stool. I tried HCL to increase my stomach acid strength but that was a huge, painful, burning flob. My acid is just find I just lack the enzymes. November Update

Getting over a almost 5 week flare of my UC, scared me at first as I thought it was gluten, but the blood stool, pain only on the outside edges of my abdomen, and only diarrhea tell me it is not gluten since I lack the neurological side effects, vomiting, and core gut pain.  Still not 100% sure on the source, I think it might have been some of the spices I started using .   On a side note I have literally fell in love with using rythem superfoods kale chips as a crushed up garnish, and in eggs

    • Increased fasting numbers even in a low carb diet is common for a type 2 diabetic who is insulin resistant.   It is called Dawn Phenomenon.  If your post parandial numbers are over 200 or lower than 70 than you should consult a doctor to determine what kind of diabetic you might be.  You could be prediabetic eventually becoming insulin resistant and possibly developing TD2.  

      My neighbor recently had her pancreas removed due to cancer.  She must be on insulin and take enzymes to survive.  She instantly became a diabetic who MUST take insulin.  Your body needs glucose.  If you are Keto, it will still find a way to make glucose.  Too much protein and it turns to glucose.  

      The only way to determine if you are a TD1 or a TD2 is to get tested.  

      It sounds like your Ulcerative Colitis is flaring.

      A doctor, if you have access to one, would be able to tell if you are prediabetic or recommend a treatment plan. 

      Yeah I did whole lot of research on it after this on the insulin and glucagon and how you can make glucagon the dominant hormone to have your body use fatty acids for fuel. BUT your liver will still be processing glycogen into glucose as a response to prevent glucose from tanking. All this time insulin is still needed for your bodies cells to utilize the glucose. 
      My pancreas we know is only getting 15% the nerve signals at the T7, I think it is just bogged down and I should keep to a prediabetic diet and taking enzymes to ease the burden on it. Maybe they can get better testing or a better treatment.

He's still going to have to eat gluten even for an endoscopic biopsy. 2 weeks minimum. Plus guidelines say no dx on an endoscopic biopsy alone - you have to have the positive blood to go with it. Even that 2 weeks will deposit more antibodies under his skin if he's got dh.  Let me put it this way. The gut damage is the gut damage & if he's celiac & it sounds like he is but we don't have labs to prove it, then there is a treatment for it. Only 1 treatment for it. A very strict gluten
