Yesterday I was in a rush all day. Hubbs and I had a big plan for dinner and it just didn't pan out. So he ended out having a pizza thing we have had in the freezer , I had a Gluten Free Pizza in the other Freezer. I took one or two bites of mine and pitched it!! It was disgusting!! So it was getting late so I ate a banana then a lil later  I had some gluten-free, Corn Chips. Well I woke up about 4 am with the worst gut ache!! It felt like someone punched me in the gut. Lucky for me it was "Just Gas" lol but now this is the second time this has happened to me!! The 1st time I don't know what I ate. I do know I am not used to eating prepackaged foods. So maby that was it? Maby all the salt that was in it? What would make me get so bloated and full of gas? OMG it was so painful!! Then in a couple hrs I was fine! :) Thank goodness!! I will not eat anymore Corn chips or a bite of another frozen gluten-free pizza!! Thats for sure!! Maby just a fluke? Sure was weird!!

It may have been a delayed reaction from the Taco Bell that you recently ate. For some of us our reactions can be delayed by days so it isn't always the last thing we ate that we are reacting to.

You may not be able to handle processed food for now.  I tried a bar once and found no need to try that again!  Sometimes even things that don't list gluten are cross contaminated.  Be happy with what you can cook at home is my motto!

Ohhhh Ok really ? I understand about the processed food. But b4 gluten-free It would just hit me like a rock! Hmm Well either way I guess that won't happen again!! I should of just eaten a banana and been done! Maby had another banana. I will learn! Sometime! Generally I don't eat processed foods. Or very often anyway. Only because b4 going gluten-free I knew processed was bothering me. I didn't know it was Gluten.  Maby I am healing so it didn't hit me like a rock? Anyway well I am glad it didn't go thru me like usual thats for sure. Thanks!! And really I didn't even put the TAco Bell experience into the equation. I always think the night b4. I guess I need to think beyond that. Altho I have been really really careful lately. Trying anyway ^_^

When I first went gluten free (for about 4-5 months) a little corn didn't bother me.  Fresh local corn was good.  But too much other corn products bothered me.  Bananas give me a lot of the Celiac symptoms.  I'm not saying that bananas have gluten - its just a food I know I have never had good luck with.

Eating at Taco Bell makes me wonder where else you might be eating?  Maybe you should cut that stuff out for a few months and give your gut a chance to heal?

Yes KarenG Usually it is a restaurant that I get a salad from. And I usually order a salad that just doesn't come with croutons. And of course the dressing on the side. This is actually the 1st time I had went to a fast food in months. Well unless I get a pop. So yea I don't think I have been Glutening myself from eating out. I thought I was being good by checking. but Oopsi! I won't do it again... I have been trying to take care of myself!! I didn't know about the banana's I have been putting them in my smoothies, but not all the time. I have been pretty gassy also but nothing like the other night. And the corn chips were the Gluten Free Frito's ...Like I said I don't eat that stuff.. But I did because I thought they were all Gluten free .... gluten-free doesn't always mean safe I guess... I will watch the banana's Thanks for the tip.

A salad isn't always safe in some places.

I did not mean to say that you need to watch bananas! In fact most of that answer isn't what I said.  I just tried to show that there are other foods that sometimes can cause the same "symptoms" in some people!

I think about all I can say right now, as this is getting frustrating for me,  is - Use some common sense!

Fritos chips didn't sit well with me.  So I don't eat them anymore.  You might like Mission brand chips as an alternative.  If you think the pizza might be a problem, keep the ingredient list and review it next time you have an issue.  See if there are matches to any of the ingredients.  Also, if it was an Amy's pizza, that might be the problem.  Some people have reported issues with Amy's products in the past.

Get tested for vitamin deficiencies.  Though neuropathy can be a symptom of celiac, it can also be caused by deficiencies due to poor digestion caused by celiac and could be easier to treat.

Thank you so much for your response  Yes it seems as though things get very painful as time goes on.  I'm not eating gluten as far as I know.  However, I'm not sure of cross contamination.  My system seems to weaken to hidden spices and other possibilities. ???  if cross contamination is possible...I am in a super sensitive mode of celiac disease.. Neuropathy from head to toes

We feel your pain. It took me 20+ years of regularly going to doctors desperate for answers only to be told there was nothing wrong with me … when I was 20 pounds underweight, suffering from severe nutritional deficiencies, and in a great deal of pain. I had to figure it out for myself. If you're in the U.S., not having an official diagnosis does mean you can't claim a tax deduction for the extra expense of gluten-free foods. But it can also be a good thing. Pre-existing conditions might be a reason why a health insurance company might reject your application or charge you more money. No official diagnosis means you don't have a pre-existing condition. I really hope you don't live in the U.S. and don't have these challenges. Do you need an official diagnosis for a specific reason? Else, I wouldn't worry about it. As long as you're diligent in remaining gluten free, your body should be healing as much as possible so there isn't much else you could do anyway. And there are plenty of us out here who never got that official diagnosis because we couldn't eat enough gluten to get tested. Now that the IL-2 test is available, I suppose I could take it, but I don't feel the need. Someone else not believing me really isn't my problem as long as I can stay in control of my own food.

If you're just starting out in being gluten free, I would expect it to take months before you learned enough about hidden sources of gluten before you stopped making major mistakes. Ice cream? Not safe unless they say it is gluten free. Spaghetti sauce? Not safe unless is says gluten-free. Natural ingredients? Who knows what's in there. You pretty much need to cook with whole ingredients yourself to avoid it completely. Most gluten-free products should be safe, but while you're in the hypersensitive phase right after going gluten free, you may notice that when something like a microwave meal seems to not be gluten-free … then you find out that it is produced in a shared facility where it can become contaminated. My reactions were much-more severe after going gluten free. The analogy that I use is that you had a whole army of soldiers waiting for some gluten to attack, and now that you took away their target, when the stragglers from the gluten army accidentally wander onto the battlefield, you still have your entire army going out and attacking them. Expect it to take two years before all of the training facilities that were producing your soldiers have fallen into disrepair and are no longer producing soldiers. But that is two years after you stop accidentally glutening yourself. Every time you do eat gluten, another training facility can be built and more soldiers will be waiting to attack. Good luck figuring things out.
