WHAT ELSE IS THERE TO EAT!!!!! JEEZ! I don't think I could do that if I wanted to. I'm a total carnivore and cheese hound.

I am a total carnivore too...love my meat...I think just reducing the overall load is what counts, so I'll do it in the other areas mostly.

Just popping in really quick, will have to come back and read to catch up....

An important tip about steaming the tortillas, do not let the water boil up into the steamer basket! That would be very bad, you will end up with a pile of mushy gooey ground corn. You want the water below the bottom of the steamer basket and as it boils let the steam come up through the little holes. Hopefully that makes sense?

Susan, they aren't very expensive (I don't think). I have a metal one, not sure what material, and it adjusts to fit different pan sizes. like an unfolding flower looking thing, hard to describe, bt it comes in handy. I steam vegetables with it, and tamales, and now the corn tortillas.

Yes, it was a little slow at work today, so when there's no work I can play. Well, I think the warning from Penguin was kind of applicable (reminding me of the prune affect, lol)...but that was okay because I'd had C for a couple of days. :lol:

I just noticed something...I'm on my husband's laptop and I have celiac.com on the favorites so I don't have to remember my user and pass. when I got on here, I noticed that the name and email is different from the new one on my computer. Is this normal?! :huh:

It's my old name, avatar, # of posts...everything!!

Prbly a cache issue, try holding down SHIFT and hitting the refresh (or reload) button in your web browser.

wait....R-ville is perfect, so we don't need counselors, right?? Karen's job can be the Altoids Sales Rep and Dispenser of Good Times.....but she won't have to sell them, just give them out freely, you know, at the parades and all, and the dances at the Town Square.....good times!

We have something in common--My baby sister is 8 years younger than I am. I always took care of her when we were kids, I took her everywhere with me! We have always been very close. I have another sister who is 4 years younger. We also fought a lot when we were kids, and only now, in the last 2 years or so are we finally getting to be close.

Patti, yes it is great to have sisters, I feel very fortunate to have them. :)

      Scott, I agree with everything you said except the term "false negative". It should be a "true negative" just plain negative. I actually looked up true/false negative/positive as it pertains to testing. The term "false negative" would be correct if you are positive (have anti-bodies) and the test did not pick them up. That would be a problem with the "test" itself. If you were gluten-free and got tested, you more than likely would test "true" negative or just negative. This means that the gluten-free diet is working and no anti-bodies should be present. I know it sounds confusing and if you don't agree feel free to respond.

      I realized it is actually important to get an official diagnosis because then insurance can cover bone density testing and other lab work to see if any further damage has been done because of it. Also, if hospitalized for whatever reason, I have the right to gluten-free food if I am officially celiac. I guess it gives me some legal protections. Plus, I have 4 kids, and I really want to know. If I really do have it then they may have increased risk.

      Been off this forum for years. Is it that important that you get an official diagnosis of something? It appears like you had a trigger (wheat, gluten, whatever) and removing it has resolved your symptom. I can't speak for you, but I had known what my trigger was (gluten) years before my diagnosis I would just stay gluten-free and get on with my symptom free condition. I was diagnosed over 20 years ago and have been symptom free only excluding wheat, rye and barley. I tolerate all naturally gluten free whole foods including things like beans which actually helps to form the stools.

      No coincidence. Recent revisions to gluten challenge guidelines call for the daily consumption of at least 10g of gluten (about the amount in 4-6 slices of wheat bread) for a minimum of 3 weeks. If possible, I would extend that two weeks to ensure valid testing.

      Thank you both for the replies. I decided to bring back gluten so I can do the blood test. Today is Day #2 of the Challenge. Yesterday I had about 3 slices of whole wheat bread and I woke up with urgent diarrhea this morning. It was orange, sandy and had the distinctive smell that I did not have when I was briefly gluten free. I don't know if it's a coincidence, but the brain fog is back and I feel very tired.
