Pasta Recipe Any Good?

Hi there, has anyone made homemade pasta of any of kind and if so, was it any good? I am thinking of trying it sometime; wondering if there is any advice out there for making homemade pasta.

I made egg noodles. I love Amish style, thick, chewy egg noodles. My Mom made an angelfood cake and gave me yolks so I took the recipe I found & went for it. They were delicious!!

I rolled the dough between sheets of waxed paper. Then i sliced them into strips with my pizza cutter. I put the whole sheet in the freezer till stiff. I broke them apart and stored in ziplocks in the freezer. Whenever I wanted some I cooked them in broth right from the freezer. It takes about 20 minutes for them to cook. Yummy!

I posted a recipe about a week ago for home made ravioli. The recipe is in 2 parts, the first being (egg) pasta and the second being the filling. The pasta certainly works on its own.

If you dig back about a week on this forum you should find it. If not, feel free to PM me and I will send it to you.

Ingredients

1/2 cup tapioca flour

1/2 cup cornstarch

3 tablespoons potato starch

3/4 teaspoon salt

4 1/2 teaspoons xanthan gum

3 large eggs (or 4 or 5 egg whites) "I used the egg yolks I was given and made a double batch. I added 2 extra whole eggs as it seemed to need it.)

1 1/2 tablespoons vegetable oil

"I also added some Italian spice mix but I will probably just add individual spices next time. It was good but I prefer a slightly different blend."

Directions

1 In a medium bowl, combine flours, salt, and xanthan gum.

2 Beat the eggs lightly and add the oil.

3 Pour the egg-oil liquid into the flour mixture and stir.

4 This will feel much like pastry dough.

5 Work the dough into a firm ball.

6 Knead for 1 or two minutes.

7 Place the ball of dough on a potato starch-floured (rice flour turns noodles gray) breadboard and roll as**thin as possible**.

8 This dough is tough and, when almost transparent, will still handle well.

9 Cut into desired shape.

10 For fettuccine and spaghetti, slice very thin strips.

11 For a noodle casserole, make slightly wider noodles.

12 If using for lasagne, cut into 1 1/2-by-4-inch rectangles.

13 To cook pasta: Cook in salted boiling water, to which 1 tablespoon of oil has been added, for about 10 to 12 minutes depending on the thickness and size of your pieces.

14 You will have to test for doneness.

15 Drain and rinse well.

If you have been consciously or unconsciously avoiding gluten because of the discomfort it produces then it is likely that your blood antibody testing for celiac disease has been rendered invalid. Valid testing requires regular consumption of generous amounts of gluten. The other strong possibility is that you have NCGS (Non Celiac Gluten Sensitivity) which shares many of the same symptoms with celiac disease but does not have the autoimmune component and thus does not damage the small bowel lining. It is 10x mor common than celiac disease. There is currently no test for NCGS. Celiac disease must first be ruled out. Some experts in the field believe it can be a precursor to the development of celiac disease. Having one or both of the primary genes for developing celiac disease does not imply that you will develop active celiac disease. It simply establishes the potential for it. About 40% of the population has the genetic potential but only about 1% develop active celiac disease.

      TTG blood test and total IGA tested on many occasions which have always remained normal, upper GI pain under my ribs since 2022. I had an endoscopy in 2023 which showed moderate gastritis. no biopsy’s were taken unfortunately. genetic test was positive for HLADQ2. extreme bloating after eating gluten, it’ll feel like I’ve got bricks in my stomach so uncomfortably full. the pain is like a dull ache under the upper left almost like a stitch feeling after a long walk. I am just wanting some advice has anyone here experienced gastritis with a gluten issue before? thank you

Skin, brain fog, nails, muscle tone all inproved when I started taking 600 mcg (RDA 150 - 1000 mcg) of Liquid Iodine drops. Some with dermatitis herpetiformis, Iodine exacerbates the rash.  I started at 1 drop (50 mcg) and worked up to 12 drops, but I don't have dermatitis herpetiformis.

      Thank you so much for sharing your experience and I found myself giggling with happiness as I read how your body reached such spring! And I hope that your current journey is also successful!! Definitely starting the food diary! So many amazing advices. And it’s very scary. It really hits all our soft spots as well as our confidence system. Most doctors I went thought I was underage despite being in my late 20s. Right now I look like am I twelve, but is also this body that’s taking so much, so I might as well love it too! Going to make the necessary changes and stay in this path. Thank you again! 🫶
