I threw a big birthday party for my 3 year old yesterday. Did the whole thing gluten free and the gluten eaters loved it.

I made baked Ziti from Tinkyada pasta. Just threw in sauce, cubed mozzarella and then covered with provolone and baked it. Two big pans GONE.

Then I put out salad, veggie tray, fruit tray, chips and dips.

I spent 6 hours making a castle shaped cake for my little princess because the only gluten free baker I know of around here makes the nastiest frosting ever. Blech. I used the Betty Crocker mixes and then made my own buttercream and chocolate ganache for the filling. Everyone LOVED it!!! They were asking "Is this really gluten free?"

My son has celiac and he was so happy to be able to eat everything without worrying.

Good for you - sounds yummy! It is so nice to show people our food can be as good as theirs (or better!) isn't it? I have done some good things with the Betty Crocker mixes also.

That's awesome!! Way to go Mom!! gluten-free food really isn't nasty!! I get so many compliments. In fact, we had an end of season soccer party last weekend and the kids were all crowding around me saying things like, "What did you bring?? You always make the best food. Your cakes are awesome!" I even had a mom come over and say she had to try the cake and then raved about it. I did fess up and admit it was just Betty Crocker yellow cake with Betty Crocker frosting! And the little brownie bites I made were gone in seconds! Again, Betty Crocker...my only touch was sprinkling them with powdered sugar!

Here's to more gluten-free parties!!

      Reply to treats I try and eat to bring up the glucose. Sometime I get up 3 times a night and eat something. I don't think food is the issue. A lot of the food they say should help doesn't.  Many mornings my level is 59 and I feel sick, sometimes for hours. It has been recommended I go to an Endocrinologist.

      Many years ago yes, after eating and going to bed, apparently my esophagus filled with food that my body rejected, the esophagus would lay against the Heart sack (pericardium?) and the heart would respond by becoming arrhythmic. That went away with the strict diet.

      I was commenting on the report saying it did not mention migraines! Yes it does last paragraph says have not seen any evidence that Celiac cause migraines! I thought this was about truth?

      It has been known for some years that celiacs suffer from migraines at a higher rate than the general populatation. It is an established symptom.
