  6. Northern Europeans have a very high genetic susceptability to Celiac Disease. Ireland, I believe, has the highest rates in Europe, although Italy comes in at a close second. Ditto for Scandinavia. Almost everyone I know with Celiac comes from one of the three area's. Aren't we lucky?

  8. We may not have official gluten free labeling but what we do have, or most of us do, is a brain.....which can easily be used to figure out what is safe and what is not.
