I think my cookies do better (less spread) after refrigerating. Got dough that I made yesterday that I will be baking later tonight. I have also frozen my dough to use much later and it has turned out fine. You mentioned earlier that you would be taking your house gluten free. I just want to remind you that your husband needs to stay on gluten until all testing (blood and endoscopy) is done. Otherwise you greatly increase your risk of a false negative. -

I don't have any scientific data to throw out here, but I will tell you that I've seen accounts from members on this board over the years that have played it both ways . . . My daughter's doctor would have diagnosed you based on positive blood test alone . . . Were you gluten free when you had the endoscopy done? That would affect the results. Regardless, I have yet to see a false positve on a blood test and I have seen boatloads of negative scopes where people do well on the diet (scoping can be tricky . . . not enough...

Personally, I would just leave it out all together, but when making something with it, I would sub your alternative milk (rice milk, almond milk, whatever) for the water component in the recipe. -
