  1. If I were going to use a mix, I'd go for the Pamela's. I am not a "supertaster," a person with extra taste buds, so I don't have a problem with the bean flours the way some people do. Other people find rice flours really gritty. I don't do well with a lot of white, high glycemic index type flours, so I tend to go with mixing up my own variations, with...
  2. I have bad, bad arthritis in my neck. It was my first "wow look at that" symptom that showed up early, when I was still in my twenties. My neck and shoulder / upper back muscles used to totally lock up, and that in turn would result in a headache. I was told it was either idiopathic (no known cause) or some sort of arthritis that just usually showed up...
  3. The problem with bulk bins at Whole Foods, is that they are made of plastic. And that you can't know what has been in them before the current ingredient, nor how they were washed. Also, you don't know where the amaranth has been, because it is generic, instead of saying on the package, "run thru a processing plant that also handles xxxx." I have seen...
  4. Where does one start with this one ? Author: No, and if you could wipe out mis labeling and cross contamination issues with manufacturing, it would be even easier. It's got a gastroenterologist who's saying: As a layperson on a gluten free diet, if I said that, I'd be considered whackadoodle, just like some vegans who insist...
  5. You are definitely on to something. However, if the kid is off gluten for a while, and they want to test him, he may not show up the proper levels of antibodies on the blood test. This can also happen anyway, even if he is eating gluten, the blood tests are not always accurate in small children (or even adults.) The important thing is not to get frustrated...
  6. There are lots of "foodie" trolls all over the internet. Just like there are trolls for all sorts of different subjects. Why the "anger?" It's very simple. I had several identities trolling me on the specific topic of auto immunity on another board, and there was a specific, deliberate effort to discredit the information I presented, which was not done...
  7. LOL at the one poster in that comment thread. "You're not a, and quit calling yourself that, but I am.... " paraphrased. It probably never occurs to her that increasing the consumption pool of customers for gluten free foods, increases her potential for choice in selecting grocery and restaurant items to consume. From an anthropology standpoint, this...
  8. Soy is in so many things where you would not expect it to be, too. I noticed it's now turning up a lot in this one brand of otherwise tasty snack bar that is gluten free. Why ? Do not the manufacturers realize that soy is a problem for a lot of celiacs and gluten intolerant people ? How about a few flavors without it, like before ? I cannot say...
  9. Wow. Look at all that counter space! I love my house, but the kitchen was built in the Golden Era of TV Dinners. By the time you set the countertop appliances out, there isn't much room for actual cooking. Most apartments we've lived in have had bigger kitchens. Alas the tiled counters are so nice and it's otherwise laid out so efficiently, it's not...
  10. This is insane. Celiac disease contributes to thyroid disease. Proven medical fact. Manufacturers of thyroid medications are putting gluten into it, or cannot or will not guarantee its gluten status. Many of these drug manufacturers are using imported base ingredients, it's going to take another outbreak along the lines of melamine tainted pet...
  11. Take a small, 8" cast iron skillet dedicated to making gluten free foods, and put a generous amount of oil in it, and make a gluten free pancake with extra sweetener. You can base it on this buckwheat recipe (sans egg) or make an almond meal or an almond meal/sorghum/amaranth pancake with egg, see here: for a pancake, it would be about a half cup total...
  12. This con artist is still trying to blame it on the invisible "Amish" bakery, claiming it has no address nor phone number. No, the Amish don't have land line phones, but do use public phone, neighbor's phones, and sometimes cell phones. No address? So how were they shipping anything anywhere, must think no one else has ever dealt with any of these companies...
  13. There is nothing like a good round of exercise and drinking a lot of water, or, as you noticed, something mildly diuretic like green tea to help get rid of this. At least you will then sleep it off. Keeping busy is better than worrying.
  14. Sugar and sweet cravings can mean things besides lack of simple carbohydrates. You listed relative lightweights first, such as rice and fruit. You may have to up the proteins and healthy fats to feel sated, longer. You can also try adding in a form of grain carb which is higher protein than rice - any time you combine gluten free grains, seeds, or...
  15. I use a dedicated blender to grind nuts. It's an Osterizer. It does about a quarter to a half cup of almonds at a time, very fast. I have a little hand mortar and pestle I do buckwheat kasha in, but that's typically for one to two servings of flatbreads or pancakes, so it seems overkill to drag out another appliance for a tablespoon of something.
  16. According to drugs.com this stuff is made of wheat dextrin, "a natural soluble fiber." With a list of ingredients like that, I'm surprised anybody could take this and not have some sort of digestive upset. At least one ingredient is wheat, others potentially could be sourced from wheat, there's artificial sweeteners, and lactose. Thanks to...
  17. This Seelig guy is such a piece of work
  18. Congrats on surviving the United States ! What does it say on the gene test ?
  19. I have had to take short term doses of prednisone for emergency control of asthma during forest fire season and severe poison oak rashes, and I will do anything to avoid taking it unless it's absolutely the last resort. Yeah, the very short term reaction is great- it knocks down whatever it is, re inflammation, but the longer term reaction(s), even with...
  20. Robbie's BBQ sauce (west coast, typically found in health food stores) is marked gluten free on the label. However, there is a disclaimer (good for them) that they are manufactured in a facility which also does wheat. They also use some distilled vinegar now instead of all apple cider vinegar, so they may not be for the super - sensitive. They do use...
  21. Are you residing in one of these gluten free culinary wasteland areas for restaurant selection, or as my husband came up with decades ago, a "no pancakes zone ?" (this was in the rural, rural midwest where we travelled very early in the day, were starving for a lunch, and then couldn't find a freaking restaurant for 40 miles that was open. ) The last...
  22. I had brain lesions. I also had a neuro who refused to admit that this is a celiac symptom - I know docs loathe "googling" patients but ..... At least I don't use a cane anymore and can feel my hands and feet, about 8 years into this gluten free routine. I also had some pretty weird visual disturbances, and those are mostly gone, except when I'm tired...
  23. This is an easy flatbread made of buckwheat, potato starch, and garbanzo flour, it needs no xanthan gum, nor egg. If you cannot find buckwheat flour, you can usually find Kasha (toasted buckwheat) that can be ground easily in a kitchen hand mortar, a coffee grinder, or blender, because it only takes a heaping tablespoon of it in this recipe. I measure...
  24. Just eliminating gluten is going to be enough of a challenge. Remember that cells need nourishment to grow and replace themselves. Basically a diet which contains fruit, vegetables, proteins, and good fats is the foundation. Some people find they cannot just replace the regular breads/cereals with the same quantity of gluten free commercially made...
  25. I don't know from a study viewpoint of a large sample. I have already outlived one parent by 10 years -anecdote. Had a couple of scares. Also, so many other symptoms went away or were mitigated, if tomorrow it turned out differently, and random fate bit me, I'd still would have thought it worthwhile to at least have my overall health improve...
