At the time of my diagnosis I could not eat chicken eggs, and around 5 other foods. These intolerances turned out to be temporary, and I was able to add back nearly all of them after 2-3 years on a gluten-free diet. Try duck eggs if you can find them. I think this can vary quite a lot from person to person. Many people seem to get more sensitive to gluten after they have eliminated it for a few weeks or more, and it sounds like you are in this group. After I was gluten-free for a couple of years I recall being less sensitive to it, and I would not notice any reaction to small amounts of accidental...

One correction on McDonald's, they do not use shared fryers for their French fries. This decision has nothing to do with gluten contamination, and more with quality control of their fries (not wanting batter particles on them, strange tastes, etc.). -

If you can share your full blood tests results with us that would be helpful. Your many symptoms could be related to gluten sensitivity, and since you had negative results you could simply start a gluten-free diet for a while. Keep in mind that you may also want to cut out oats for a while as well, as some with gluten sensitivity also cannot tolerate oats... -

Also, it is more than "wise" to eat at least 2 slices of wheat bread for 6-8 weeks before a blood test for celiac disease, but is the Mayo Clinic protocol, and your results could be artificially low or a false negative if you don't do this. It would likely be a good idea to delay the test until you follow the full 6-8 week protocol. -

Certainly the food an animal eats can affect many things, including is size and perhaps even color, however, if you are suggesting that the meat may not be gluten-free if an animal eats gluten grains, there is no evidence that I've seen over the last 25+ years that would support this concept. You may also want to be casein/cow's milk free for a while, as many celiacs also report having issues with casein, especially right after diagnosis. -

Wheat allergy is not the same as celiac disease, and to get a blood test for celiac disease you need to be eating ~2 slices of wheat bread daily for 6-8 weeks beforehand. If you ask your doctor for a celiac disease blood panel it should be what you need to be screened for celiac disease. Here is more info: -

The loose stools could be from anything, even the fact that you weren't eating food for so long, and then started eating them again. You also may have other issues going on, for example additional food intolerances, so you may need to keep a food diary for a while to see if the issue can be linked to a particular food or foods. -

Testing it would be the only way to know for sure, but based on your description of having cleaned the cutting board well, even though it is wood, it is very doubtful that enough gluten could have been transferred from the cutting board to the sauce, and given the large amount of sauce--4 gallons--it could not be enough to contaminate such a large batch.
