ARCHIVED How To Identify Another Intolerance After Six Weeks Gluten Free?
Pegleg84 replied to KCG91's topic in Food Intolerance & Leaky Gut
Six weeks is not very long, so you're probably still healing. It's sometimes not a bad idea to drop dairy for a while since it's hard to digest, but unless you're getting worse or having weird symptoms you didn't before, then it's likely just part of the healing process. Be sure to double check your kitchen and food for any lingering gluten. Give yourself... -

ARCHIVED How To Overcome The "wants" + Anxiety
Pegleg84 replied to bburmeister0407's topic in Coping with Celiac Disease
I was working at a pizza place when things got nasty and I decided to go gluten free. I still joke that that's what set it off (which, you never know, could be true. I was eating a lot of pizza/pasta there for a while... and loosing 10lb when I should have gained it). I only worked there for a month after going gluten-free, so can't say how much it affected... -

ARCHIVED Finally Diagnosed And Wondering If I Have To Live In A Bubble...
Pegleg84 replied to Coconutkris's topic in Coping with Celiac Disease
Mmm... this menu is delicious... Anyway, in all seriousness you've come to the right place. Sounds like you've been "gluten-light" for a long time, knowing that it must be a problem, but only recently being diagnosed and realizing how serious it is. You obviously want to change your diet so that it's a safe as possible. However, you don't need to live... -

Ha! I'm sure the fryer was very dedicated to their, er, fryer... I am fortunate enough to have a fish and chips place near me with a dedicated fryer for gluten-free batter, and dedicated fryer just for the fries. I have to be careful not to eat there too often though cause, well, it's fish and chips. 2 words: Onion Rings. (!!!!!) Ok, back to the ridiculousness... -

ARCHIVED Shared Kitchen "review And Renew"
Pegleg84 replied to GF Lover's topic in Coping with Celiac Disease
Or some of those gluten-free tags/stickers that you can put on things. I could also offer to weed out the cupboards. There's a crapload of old tupperware down there. I will also talk to my stepfather and see what he's doing, since he's the gluten eater and does a lot of the cooking. I might see if the local butcher back home can get in a turkey leg... -
Ooh man, that's not cool. "I don't know" should mean "No, don't touch this". It does sound like it could be more than just a reaction to the corn, though, like maybe something was off with the powder aside from that. But then again, I get stupid chills from glutenings some times, so it could be that if this was corn, and just corn, then bam! You should go...

It could be that you've developed an intolerance. I know I have trouble with brown rice for some reason. It's more of a "gut" reaction though, but I don't see why neuro-symptoms wouldn't be possible. I'm not sure what else you had to cut out on this diet you were doing, but are you still eating dairy, soy, corn, nightshades, eggs, which are other common...

ARCHIVED Shared Kitchen "review And Renew"
Pegleg84 replied to GF Lover's topic in Coping with Celiac Disease
Yeah, I think I need to send Mom some reading material. It could be one of those cases where you're told something when you start out, and never learn otherwise. I tried to talk to her about the state of the kitchen (Mom, why do we still have this spatula we've been using for 15 years and is all melty and gluteny and awful?) but she seems to think I'm being... -

ARCHIVED Amount Of Gluten In Single, Small Bread Crumb?
Pegleg84 replied to powerofpositivethinking's topic in Coping with Celiac Disease
It might not be that the flours and such your baking with are contaminated, but that you could be reacting to something else in them. I often have trouble if I eat too many baked goods even when I know they're perfectly safe. Could be too much refined stuff, sugar, gums, an intolerance rearing its head... who knows. It's also possible that if you're getting... -

ARCHIVED How Can You Manage A Gluten Challenge When Cc Affect You So Badly?
Pegleg84 replied to Renegade's topic in Coping with Celiac Disease
I wasn't patient enough to wait to get a biopsy done (blood tests were negative, probably false), but after feeling a million times better gluten-free, there was NO WAY I would ever touch the stuff again. I am quite confident in my self-diagnosis, and that's enough for me (Celiac runs on both sides of my family). The only benefit of having an official diagnosis... -

Merry Xmas Mom, here's a new toaster. Sorry you've been glutening yourself for 7 years (that'll go over well)... I really worry about where she's been getting her information. She goes to Celiac Association meetings and everything! Probably needs a serious refresher. (sorry. rant) And I never thought about "hot pads" either (I don't think you want hot... -

ARCHIVED How Long Do Symtoms Last?
Pegleg84 replied to Jennifer333's topic in Coping with Celiac Disease
yes, one piece of bread after 11 years gluten-free is not going to give you a positive blood test, but it WILL (as you just found out) give you a doozy of a glutening. If you haven't had problems for a long time, then your gut just went from healthy and happy to "WTF did you just feed me!?" and it going to take a while to recover. I'd say at least a month...- 3 replies

ARCHIVED Shared Kitchen "review And Renew"
Pegleg84 replied to GF Lover's topic in Coping with Celiac Disease
I live on my lonesome, partly because I didn't want to have to worry about sharing a kitchen with roommates who may or may not get how careful I need to be. That said, even I hung onto a few things from pre-gluten free days that should have gone a long time ago: a cutting board that I got shortly before going gluten-free, a few wooden/plastic utencils, etc... -
In the early days, even random things can set off symptoms, so it could have been CC from the waffle iron, could have been something in the mix (even if it was perfectly gluten-free) that your body just decided it didn't want to deal with. It takes a while for our guts to heal, and until then it can be pretty fussy. But short answer: yes, CC can cause...

ARCHIVED Strange Sensation In Neck, Anyone Have This?
Pegleg84 replied to HumanDecency's topic in Coping with Celiac Disease
Could be a pinched nerve? That's the first thing that comes to mind, especially if you're having tingly fingers too. Some Celiacs do have peripheral neuropathy (tingling/numbness in extremities) as a symptom, but I have no idea if that affects other parts of the body. Not sure if sinus issues could cause neck pain like you're describing, but I do know that... -

ARCHIVED After Celiac Diagnoses - Were You Angry?
Pegleg84 replied to tonalynn's topic in Coping with Celiac Disease
I was more relieved when I was first "diagnosed". It runs in my family (also both sides), so when I started feeling like absolute crud all the time, lost 10lb overnight, was an emotional wreck etc, I new gluten was probably the culprit. One week without it and THANK GOD! Yes, it sucked. My hardest thing to give up was beer. (though I've found some pretty... -

ARCHIVED Broccoli & Cauliflower Causing Problems?
Pegleg84 replied to josh052980's topic in Coping with Celiac Disease
I take a digestive enzyme just to keep things running smoothly gluten or no. That could help with the broccoli bloat, and anything else bloat for that matter. You could ask over on the "other intolerances" board to see if anyone else has issues aside from just gas. I love broccoli too, but really can't handle it raw anymore. Cooked seems to be ok as... -
Welcome to the Forum! We are here to help however we can. Yeah, that is not a healthy weight for a guy your height, and if you still feel like crud, something is not right. Aside from double checking everything in your kitchen/bathroom, and limiting yourself to your own kitchen/food prepared by your own hands for a while, then it sounds like you probably...

ARCHIVED Best Way To Deal With Servers?
Pegleg84 replied to annajazz's topic in Coping with Celiac Disease
Yep, taking a risk wherever you go. However, if you DO decide to eat out (and many of us do), then a server who won't take you seriously is not a good thing. You are perfectly within your right to ask for another server, or ask to speak to the chef directly, or say you can't eat there and just leave. You are not trying to steal their recipe. I've gotten... -

ARCHIVED New To gluten-free And Anxious About Going Out
Pegleg84 replied to MChase's topic in Coping with Celiac Disease
Yep, contact the restaurant/caterer and find out what they can do for you. If it doesn't sound promising, bring lots of little snacks, or ask if you can bring your own dinner and get it warmed up there or something. I was at my cousin's wedding this past weekend, and since several of our family members are Celiac, almost all the food was gluten-free,...- 11 replies

ARCHIVED Ridiculous Conversations
Pegleg84 replied to Auntie-Manda's topic in Coping with Celiac Disease
while I'm sure sourdough is better for you IF you CAN eat gluten, saying that it's safe for celiacs and other gluten intolerance is total baloney (or something much harsher) and very irresponsible). People need to give up their attachment to this need for "normal" bread. There's some really good gluten-free bread out there! It doesn't have to be full of sugar... -

ARCHIVED Greater "sensitivity" To Alcohol?
Pegleg84 replied to NoGlutenCooties's topic in Coping with Celiac Disease
I'm pretty sure it's because, before going gluten-free, our bodies weren't absorbing all the alcohol. Once it starts healing, BAM! I went from being able to hold my beer pretty well pre-gluten-free, then down to drunk on 1 glass of wine after. I've re-built my tolerance over the years, but more than 2 or 3 drinks puts me firmly in tipsy category. I drink... -

ARCHIVED Sharp Pains From Bourbon?
Pegleg84 replied to Ys255's topic in Food Intolerance & Leaky Gut
As I told my Celiac aunt whilst sipping some whisky this weekend: if it's distilled, it's safe (she's been gluten-free longer than anyone else in my family, and said she just kind of glossed over that fact). I've been drinking a lot of bourbon lately, and aside from the usual affects of alcohol, and maybe a tad of heartburn, it causes no symptoms. That... -
