  7. I make a pan of 8x8 of the brownie mix. Let it cool completely ( I let it sit on my counter for about a day or two) flip out of pan cut into 9 pieces and wrap and freeze individual servings. When I need a quick snack/dessert, I just take one out of the freezer and nuke for about 15-20 seconds....AWESOME! The brownie mix already has chips in it. Wenmin

  9. Egg and Rice
  10. I make red beans and sausage in individual servings and freeze. I always have cooked tomatoes with cut seasonings (I simmer in crockpot for up to 15 hours) in the freezer to whip up a quick lasagna or spaghetti. Another great meal that is good as leftovers is cornbread with hot dogs and velveeta cheese cut up in it before baking. Serve over a mound of...
  11. When I found out that I had Celiac Disease in July 2008, I was SO relieved because of the horrible pains and problems gluten was causing me. I don't miss much that I can no longer have. I have found substitutes for most items. Yes, it is a problem to plan ahead, but my well being and mental attitude towards life is worth it. I know this is hard to comprehend...
  12. Cut onions into rings and put in refrigerator in very cold iced water for an hour or so. Remove from fridge, pass in egg and milk batter with seasonings then pass through seasoned corn flour (very fine ground up corn meal). Fry as usual. MMMMMMM! Wenmin

All gluten free. 2 pounds Velveeta cheese 1 can evaporated milk 1 stick margarine Cut buttter and cheese into 1 inch cubes place into large microwave dish pour evaporated milk on top and nuke for about 2 minutes at a time until smooth and creamy. Stir in between each nuke time so cheese does not burn. Ususally...

  21. I've made corndogs by cutting hotdogs into bite size pieces and baking them in a gluten free better of corn bread, along with a few cubes of velveeta cheese. You don't get the corn dog on the stick experience, but I usually serve it over a bed of chilli and WOW! what a good dinner.... Wenmin
  22. Betty Crocker Gluten Free Chicken and Dumplings Just a few days ago, I made the Betty Crocker Gluten Free Chicken and Dumplings recipe. It was made with Bisquick. I had never eaten chicken and dumplings before this. This was the most fantastic recipe I tried so far. I LOVED it! Google the title above. Really simplistic ingredients. I substituted...

  25. Just in the last month or so, I have been feeling really terrible at times. I am on synthroid and just had a light bulb moment. Could it be the synthroid that I am taking? I found several posts online that state the company can no longer guarantee the gluten free status of synthroid. Just wondering if anyone else is taking this med and not having issues...
