Unfortunately both blood tests and endoscopy/biopsy require you to have gluten in your system. If you are looking for a Celiac Disease diagnosis, you will have to go back on gluten (some say a substantial amount of gluten for a period of at least three weeks...my Celiac Doc told me a month). Since you are gluten-free, perhaps you should stay that way... -

There is a kitchen appliance that has plastic bags that vacuum seal...but I like KarenG's idea of getting some fun duct tape -- Just put whatever meal in a ziplock and then put an extra seal of fun duct tape -- I've seen the patterns like zebra or cheetah or bright colors at craft stores as well as home improvement stores...the tape seems like the simplest... -

You really need to talk to your youth group leaders -- are they aware of your dietary restrictions? If you were my daughter and we had already talked with the leaders and you still wanted to go on the trip - I would use a food sealer to seal your previously prepared meals -- seal broken -- don't eat it. Check with your GI doctor. Was the endoscopy specifically for Celiac Diagnosis? If not he may not have taken the proper samples. If it was specifically for Celiac -- did they draw any blood before the endo? My Celiac GI always takes blood the day of the endoscopy to verify that I am not accidentally ingesting gluten. I wouldn't go back on gluten if... -
It will get easier with time...those first few months I was close to tears in the grocery store and found it really hard to avoid the office treats. I second Bubba's Mom -- I misread your original post and thought you had already had an endoscopy. If there is a chance you will be considering having an endoscopy, do not stop eating gluten until after that is complete.

Welcome! I hope you get answers from the mass blood draw...as others mention - if you have questions post the results here -- many can explain the results better than some medical personnel (especially primary docs and nurses -- even some GIs that don't specialize in Celiac can be less than helpful). Good luck to you on finding an answer to improve...

I agree with others above -- completely remove gluten for a period of at least three months. Many have negative blood and/or endoscopy and improve when they remove gluten -- my kids and grands all did. -

Welcome -- It is very thoughtful of you to make your friend a gluten free meal. We use basically the same recipe as yours...for "chili seasoning" we use a combination of Chili powder, cayenne pepper, garlic powder (or fresh garlic). Perhaps it is just our family...but when a restaurant really tries to have a gluten policy ffrom mgmt to server...we support them - even with an occasional cc or gltening - let them know what they are doing right -- and absolutely let them know when they slip - I have had many wonderful conversations with young servers that had first heard of gluten-free...

Even here in California -- I'm in san diego (sothern cali) plenty of plain (white/yellow flesh) sweet potatoes -- my daughter lives just north of the bay area - loads of sweet potato in a rainbow of colors - love the purple ones called "japanese sweet potato" where I purchased them.

Try sweet potatoes, not yams - - they are not in the same family as russets, red and gold potatoes. We bake, mash, boil and roast them - great substitute!
