ARCHIVED American Cheese
kareng replied to blahblah's topic in Gluten-Free Foods, Products, Shopping & Medications
Cheese is almost always gluten-free. you would still want to read the ingredients. Deli cheese , cut in the store, may be cc'd. Depends on what else they cut on the slicer. -
ARCHIVED Wedding Cake Please Help
kareng replied to nonnarae's topic in Gluten-Free Recipes & Cooking Tips
Just a thought - rice flour tends to give you a sandy texture. Maybe skip that. Try some sorghum In your flour mix. Another thought is to get the cake from a gluten-free bakery but you decorate it. -
ARCHIVED Nervous For Biopsy Tomorrow
kareng replied to sweetzucchini's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
What they look for in the small intestine is very very small. It is next to impossible to see with a scope. Some scopes seem to have a little clearer picture but its basically a microscopic thing they are looking for. That is why they take biopsies that are looked at under a microscope. -
ARCHIVED Quinoa Reaction?
kareng replied to Nikki2777's topic in Gluten-Free Foods, Products, Shopping & Medications
I find that if I eat a lot of Quinoa - it upsets my stomach. I think its hard to digest and maybe has a lot of fiber? -
Even easier to find- stick a sugar packet in the bottom of the salad. If its meat with bread on the plate, to make sure you get a fresh plate - cut the meat in half. And maybe a sugar packet, too?

ARCHIVED Well Thats It Then !
kareng replied to CurrantCottage's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
And that doc doesn't know what FODMAPS are - yeast isn't the issue with bread. Here is a nice easy and basic explanation: Open Original Shared Link -
Good! You got that out of the way now! Onward.....

ARCHIVED Well Thats It Then !
kareng replied to CurrantCottage's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
She could be right and it could be FODMAPS. Wheat is a high FODMAP food. So cutting it out cuts out a lot of the problems for many. The good news, if that is the issue, is that you don't have to be super careful about being gluten-free. You can go to a restaurant and not worry about the soy sauce - just don't get wheat based noodles, for example. -
No. Did the foggy and cramps not tell you something? That you are reacting. Open Original Shared Link "The gluten-free diet is a lifetime requirement. ARCHIVED Mixed Data On Acceptable Iga And Igg
kareng replied to thomasjshook's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
I have never seen that in any reliable Celiac info. Could you please share your scientific/medical source? Right now, tests have a postive range and a negative range. -
So you have intestinal damage - whether you directly feel it or not. Have you checked your bone density? Are you anemic? Low on B12, D, etc. those are all things that can be caused by Celiac disease.

ARCHIVED Feeling Horrible After Cutting Out Gluten
kareng replied to DistressedNewbie's topic in Coping with Celiac Disease

I am curious why they tested you for Celiac? That isn't a normal blood test. They must have had a reason. Read here: Open Original Shared Link "The gluten-free diet is a lifetime requirement. ARCHIVED Froyo Toppings
kareng replied to ThisIsMyUserName's topic in Gluten-Free Foods, Products, Shopping & Medications
Usually we can't use the toppings because the perfectly safe ones have crumbs from the unsafe ones. Someone slops some Oreos into the strawberries. Or uses the graham cracker crumb spoon in the gummy bears. IF you really want toppings, maybe bring a little baggie to add after? -
ARCHIVED Smucker's Simply Fruit Blueberry
kareng replied to wolfie's topic in Gluten-Free Foods, Products, Shopping & Medications
First thought - the original post is form 2008 - ingredients change in 7 years. Second - the OP was asking about a product that is like a jam or jelly - not the Fuitfulls that are eaten more like applesauce Third - they don't appear to contain any corn syrup or soy ingredients from the website - INGREDIENTS FRUIT SYRUP, BLUEBERRIES, LEMON JUICE... -
I am going to assume that this boyfriend is a good guy and wants the best for you. So.... assuming he is a good guy, does he not understand that Celaic disease is a very real and serious disease? That the only way to treat it is with diet? Maybe show him some info from doctors? Like this: Open Original Shared Link Does he understand that...

kareng replied to Mr. Pep'r's topic in Gluten-Free Foods, Products, Shopping & Medications
Actually, the law in the U.S. does not require you to actually test something to say it's gluten-free. But if you are challenged, it better be <20 ppm.- 6 replies

Sounds like they should have tested her for Celiac. If she is still eating gluten, she could and should be tested. -
ARCHIVED Another Pots And Pans Question
kareng replied to dania's topic in Coping with Celiac Disease
You don't need separate dishes or silverware or glasses. The basic idea is that smooth things can wash well - stuff with lots of scratches or cracks or crevices might not wash as well.
