  1. Regular Skippy has peanuts, oil and salt. No preservatives
  2. I like Skippy. It doesn't really matter.
  3. I keep some flours in the freezer. It doesn't keep indefinitely - nothing does.
  4. I don't know that rice flours are all that healthy. Try blends of sorghum, millet, and a starch like tapioca or arrowroot. You could add flax or bananas or apples to add some fiber & nutrition to a muffin.
  5. Maybe it has nothing to do with Celiac and gluten? People do get reflux and "sloshing" and not have Celiac. Maybe go to a pediatric GI and see if she has something else going on? Maybe see if she will do a more restricted diet for a few weeks so you can add things in and see what bothers her?
  6. Usually, for a person with Celiac diasease, once you start healing, you often find your self very hungry for a while. You are suddenly able to absorb food and it seems your body craves it. If that isn't the case for you, this is what the doctor and dietitian told us to do to get my mother's appetite back. You have to eat something every 2 hours...

  8. They usually do the endoscopy to get a biospy. Celiac damage is usually microscopic, to the camera can't see it. If you have high Celiac antibodies and they can actually see the damage, and you antibodies go down on a gluten-free diet - then it sounds, to me, like you have Celiac. Celiac Sprue is the old fashion name for Celiac. It is the same thing...

  10. Make sure you are eating a balanced diet with protein and carbs. Sometimes people drastically change the basics and that can mess you up. For example if you ate a lot of bread, you may want to find other carb sources.
  11. Just curious - they weren't "dried " papayas were they? Even if they were fresh - they were a new food for you, so you might want to keep an eye on them.

  14. It could be anything. It isn't what you just ate. It can take a day or two for food to go from one end to another. Changes in diet can cause issues. Even a change from day to day.
  15. I just use pure local honey. All honey should be gluten-free.

  17. Actually, I do have some of that experience, but how would anyone know that unless they knew me? Lol Universities with an Agricultural program can test for gluten. It costs money, but they can give you a complete analysis of your product, too. some stores will require that sticker that says calories, sodium , etc if you want to sell in them...

My theory is it depends on many factors- - your personal pain threshold - how much gluten in a hit - how long you have healed - a cumulative effect - a teeny bit on Tues at Grandma's, a little Wed night at a restaurant, etc. - your own immune response - what you eat with the gluten ...
  19. A stomach virus, aspartame, food poisioning and capers all give me the same intestinal issues as gluten.
  20. Please link to the studies that prove that glyphosate is the cause of Celiac. From what I have seen, that has been looked at but hasn't been proven. corn and rice " gluten" is a completely different protein than the ones that a Celiac reacts to. The common useage of the word " gluten" means the protein found in wheat, rye and barley.
  21. An intolerance to cranberry or a pesticide is not a " glutening". There are other reasons for bloating and constipation. There are a ton of lovely fruit out there. Maybe you should just lay off the cranberries?
  22. Sorry. Sometimes I am too blunt. And I have seen too many companies be irresponsible with the label of gluten free.
  23. I think I didn't say that right. I am not worried about the gluten that probably isn't attached to some wild oats. I worry that a company that is claiming their food is gluten-free, doesn't know what is gluten-free and is asking people on a forum. It makes me wonder if they are like a few other companies we have seen and are using spelt (as an example)...
  24. It worries me that you label products gluten-free but don't seem to really understand what gluten is. If you use this flax that is contaminated with something - you believe its oats, but it could be anything. Will you update the ingredient lists on your products to reflect that they now contain oats? I really think its irresponsible to use an "unclean...
