  1. Lisa and Karen have this on the money. There may be a dusting of cellulose (which is always gluten-free), but flour would make the cheese sticky--the opposite of the desired effect. It amazes me that there are still people who believe that flour is an anti-stick agent. It is a binder, for goodness sake.

  9. Maybe at Wendy's, but never at McDonalds. Doing that would taint the fry oil and affect the taste of the fries. The taste of the fries is sacred at McD and nothing is ever allowed to contaminate the oil. It is not to keep it gluten-free, but we do benefit as a side effect.

  19. Like most frozen bakery products, they are partially baked before freezing. Raw dough just does not freeze well. They are rather stiff, and I don't imagine that they would shape well as a pie crust.

  21. Celiac disease damages the villi in the small intestine. The villi produce lactase, the enzyme required to digest lactose (milk sugar).   23. Pork. Seriously, pork. Glutamic acid is an amino acid which is a constituent of many proteins. The aging and curing of bacon allows some of the meat's proteins to begin breaking down. MSG is the sodium salt which forms when free glutamic acid encounters salt. To a lesser degree this is also true of well aged beef.
  24. There are many, many possible additives. Most are gluten-free. I have never seen cottage cheese that had added gluten. CC is the concern here from the salad bar.
