I split the kitchen. No gluten on any counter left of the sink. Gluten allowed on the right side only. Please leave your gluten toaster on the counter. I will put it away and scrub the counter top as that will satisfy my OCD self. Gluten eaters are allowed the bottom drawer in the refrig and one small separate cupboard. It's not as bad or rigid as it sounds...

ARCHIVED First Holidays Since Being Diagnosed
cap6 replied to diane64's topic in Coping with Celiac Disease
I was diagnosed in March and was not dealing with this at all well. My therapist told me to look at this first year as A Year of Firsts. My first meal in a restaurant, my first trip, first b-b-que, first holiday etc. This really helped me mourn the foods lost and to move forward. I made a list of "firsts" and how I dealt with them (some not very well... -
we are going to a friend's and I am worried about CC. Flour flying in the air on one kitchen counter and our friend trying to make something for me on the other counter.......Not working for me! I decided to make my own stuffing to bring and we agreed on a couple of other things that I will make to share. That way I can eat my own stuff and feel safe. ...

ARCHIVED Sweet & Sour Sauce
cap6 replied to Wakeboarder's topic in Gluten-Free Foods, Products, Shopping & Medications
San-J is sooo good! It's become a staple around here. Some of them are no marked gluten-free though so be carefulk. -
I used to get canker sores really bad, 8 to 10 at a time. Since going gluten-free they are much less. Now I get them once in awhile and they never ulcerate to a painful point, just irritating and are quickly gone. I never thought about them being triggered by glutening. Think I will start a food diary and watch!

ARCHIVED In A Slump And Need Some Help
cap6 replied to The Glutenator's topic in Coping with Celiac Disease
I am 7 months into this and still feel embarrassed at bringing out my own food but force myself to do it. It is getting easier as time goes by so I am encouraged. I usually wait till last to order and just say that I am a problem child with severe food alergies and then order my salad or just a drink. So far...with the exception of one very bored server... -

ARCHIVED Just Diagnosed: How To Keep Eating Enough?
cap6 replied to GFshay's topic in Coping with Celiac Disease
No great words here as I am still struggling just a couple of things that have helped me. I always have a Muscle Milk with me for emergencies. It is a high protein drink that is pretty easy to find in the stores & is marked gluten-free. Also I make up a weekly menu for all meals & snacks. It seems to help having a paper tell me what to eat rather... -
I agree that it could be a mental state issue. I am retired now so we have an easy relaxed morning during the week day mornings and I can go pretty much ok most of the time. If we are up and out of the house early then I feel rushed, can't go and so starts up the backed up issue.

cap6 replied to tiredofbeingsickandtired's topic in Gluten-Free Foods, Products, Shopping & Medications
I won't let my son run a hot chocolate through my machine for fear of cc. Just would rather be safe! -
ARCHIVED 1St Gluten Free Holiday Coming Up - Need Pep Rally!
cap6 replied to sahm-i-am's topic in Coping with Celiac Disease
My first too. We're going to a friend's home & she is cooking. She's a chef & tried to be gluten-free but I don't feel comfortable. She gets offended eaisly if she works on a gluten-free meal & I don't eat. Oh well. Think I'll take a couple of my own dishes (stuffing & such) and be filling up on that! -
ARCHIVED Celiac Literally Shifted My Entire Life
cap6 replied to jensey's topic in Coping with Celiac Disease
I don't think that anyone except for another Celiac can really understand what a hug life change this is. Friends say they understand but it's easy to that say they understand while they are munching on a treat we can't have! hmmmm That sounds a little bitter but......... ok, let me explain. This is month 6 for me and my partner & I are on a week... -
check out Natural Balance dog food. It's gluten-free. We have 5 dogs so feeding plus treats was a challenge. I am still careful to clean up after, wash hands etc ~ but I feel more comfortable. Plus it's much easier when we are traveling in our rv with all of them. Yes! all five of them. lol

ARCHIVED Typical Weekly Menu?
cap6 replied to blondie1985's topic in Gluten-Free Recipes & Cooking Tips
I don't like to cook at all so this has really been a challenge. I make up a 2 week menu & then spend on day cooking & freezing meals ahead so that all I have to do is defrost & heat it up. Add some veggies & we're good to go. -
ARCHIVED Experience And Service At Outback Steakhouse
cap6 replied to Aphreal's topic in Coping with Celiac Disease
I love Outback. They have a real laminated menu not just a piece of paper hot off the computer printer. Last two trips there the servers have been well acquainted with Celiac, one sat down to chat about her mother-in-law's Celiac. I feel very safe there. -
ARCHIVED Gluten-Free Pet Food List
cap6 replied to SGWhiskers's topic in Gluten-Free Foods, Products, Shopping & Medications
I just switched all our dogs over to Canidae as (to my inexperienced eye) it looked pretty safe and it is grain free. I think I read the ingrediengts on every bag of dog food in the store! Also on another thread someone suggested gluten free rice chex as a treat. Canidae: Chicken meal, turkey meal, lamb, potatoes, peas, chicken fat (preserved with mixed... -
ARCHIVED Any Campers, Backpackers, Hikers Out There?
cap6 replied to Lostfalls's topic in Sports and Fitness
we travel in a fifth wheel for 3 months at a time. This was my first summer on the road since being diagnosed so cooking was a challenge, especially since i don't much care for cooking. The refrig/freezer in a trailer is not huge so it's hard to bring much from home or to plan ahead far. I cooked a lot of the tin foil meals. "Fix it in Foil" is a handy... -
ARCHIVED Chicken Gluten Free ? Oats Ok ?
cap6 replied to undiagnosedillness's topic in Gluten-Free Foods, Products, Shopping & Medications
Question ~ the comment was made that different celiacs react to different levels of gluten. I understand levels of sensitivity but if a crumb is ingested doesn't it cause the same level of damage? Trying to figure this all out...................... -
We rv'd for 3 months this summer (just got home) and I got so tired of restaurants saying they had a gluten free menu only to get there and find out that their idea of gluten free was a choice of 3 different salads. I was really really tired of salads. lol Guess you have to call ahead and ask what is on the menu! What a learning precess.

ARCHIVED Shouldn't Have Taken Communion This Morn
cap6 replied to srall's topic in Coping with Celiac Disease
I have avoided the entire issue by not attending church since being diagnosed a few months ago - and I am not happy with myself about that at all. I just can't seem to resolve the issue and so am choosing the avoidance. Not a good choice. So.... I felt encouraged by reading all of your comments.
