Central Oregon is an awesome place for celiac friendly dining!
  3. A little over a year ago I attended a one day workshop led by Shelley Case, author of "The Gluten~Free Diet, A Comprehensive Resource Guide". She has worked extensively with both the U.S. FDA and Canadian version (CDR - I believe I have that correct) in regards to gluten free labeling. She is extremely well educated and knowledgeable when it comes to the...
  4. The celiac Disease Foundation just did an article on the reasons why some celiacs have problems with even glutyen free oats. It has to do with a protein in them that is very similar to wheat. I will try to find it and post it. It was on my fb so will have to look back a few days worth.
  5. If the package says gluten free and you have not had any ill effects then they are probably fine but if you have questions do call the company.
  6. Every time you cheat you do more damage to your body and each time it may take a little longer to heal. It's your choice.
  7. As your body heals symptoms can change. "Can" change. Everyone is different. My symptoms at 6 months were different from at 5 years.
  8. Just another two cents here..... I was diagnosed bipolar, depression many years back and was on three different medications. After being gluten free for two years (I was one of those who took much longer to heal) I started to slowly cut back on my meds, one at a time. It took over a year but I am not medication free. My doctor feels that my depression was...
  9. Again it is so different with everyone on reaction time. The first couple of years for me I swear I could feel it hit my gut almost immediately, now it takes a few hours.
  10. Me personally? Nope. I wouldn't. My testing came back negative because I was so sick that I honestly stopped eating, just a few bites of rice, yogurt, so basically had no gluten in my system. My diagnosis was based on my mother's & grandmother's history and my symptoms which was good enough for me. And I know if I should eat a crumb of gluten how sick...
  11. If you aren't doubled over in pain have a bagel. and one for me.....and one for her....and one for her....! Good luck!
  12. I don't think I would announce anything to anyone as that sort of labels you as High Maintaince. If he doesn't eat at the meals order extra beverages and if someone asks quietly mention that he has "allergies" and let it go at that for now. Just my take on it.
  13. Everyone reacts slightly differently. Everything you describe sounds quite normal for a glutened reaction. For myself, I feel slightly sick to my stomach, then I get diarrhea, followed by cold, clammy sweaty chills, then comes the vomiting and think I am going to die followed by passing out followed by several days of constipation. This is followed by renewed...
  14. Gluten free products are generally safe, it is all the additives in the product that tend to cause problems.
  15. read the ingredient list. A lot of them will show a high liquid content or "packaged in broth". That alone should not make it unsafe but you may be reacting to one of the added ingredients, not any cross contaminatiuon. Organic, if you can, might be safe choice as the chicken themselves aren't being fed anything bad either.
  16. Costco sells an organic coconut oil. If it pure coconut oil then it is gluten free
  17. I am five years gluten free and take iron supps of 325mg 3x's per day for past year (plus ). I eat a lot of iron rich foods as well. My doctor said that low iron is very common with Celiac and that it is quite possible I will always be on some form of iron supp. Was also on b12 injections for about two years. Doctor is testing me now again on my levels as...
  18. Absolutely cut out that oat bran!!
  19. Ask the pharmacy to use a clean pill sorter and you should be fine as far as the gluten goes.
  20. Oh my!!! Don't think I will risk voicing my concerns about all of the unhealthy ingredients that were consumed and that could have caused the problems or that we shouldn't blame the slightest thing on cross contamination. Nope. Keeping my mouth shut here.
  21. My fav "go to" when I run out of time is to mix about 1/4 cup or so coconut oil with some organic mustard and a little water making a sauce. Stir it up, pour over chicken. Add some capers if you want. Bake and serve.
  22. I do agree with your statements Colleen. However, I am sitting here thinking this down. If my partner was diabetic I would support that by not bringing stuff into the house and get my fix elsewhere which it does sound like the posters husband does to some degree. What bothers me is that she indicates that the home is extremely small which makes it doubly...
  23. To the safe chain list add Red Robin, BJ Brewery. Because so many places now offer gluten free menus I make sure the server knows that I am gluten free but Not by choice, I am celiac. I discovered that some places actually prepare the foods differently if you are eating g.f. by choice as opposed to Not by choice!
  24. Depending on the situation, yes I list as an allergy as that is what most people understand. And if I had a celiac child I think I would be writing it in red!!!!
  25. Food is such a personal thing! I am gluten free five years and paleo (no processed) for the past two years. So, personally, I will not eat anything that has additives in it. That said, to be totally honest, I do eat out once a month which means that I am at the mercy of the establishment for unhealthy choices. My overall health had improved greatly in the...
