I almost forgot my favorite vegetarian grilled thing. Portabello mushrooms! I brush them with a gluten-free Italian dressing to keep them from drying out. They grill up with a great texture and you can eat them with cheese and gluten-free bread like a burger if you want. -

It is completely up to you. If you feel like you will eat gluten without the diagnosis, then you need a biopsy. If you are willing to stick to the celiac diet (and you probably are celiac if you have positive bloodwork a rash that's spot-on for DH) there is no need for the biopsy. As far as diagnosing, two weeks shouldn't be enough time to reverse... -

The only way to definitively diagnose non-celiac gluten sensitivity is to try the diet. There is simply not enough scientific information out there about gluten sensitivity for a real diagnostic test to be developed. My advice to you is to listen to your body, and stop eating food you know makes you sick (gluten). -
The only dumb question is the one you don't ask. Bacon and sausage tend to be IBS triggers. You could try a lower-fat turkey bacon.

Oh, bummer. I totally feel for you. I ate at a Greek joint last night that my friends really love. I get around it by organizing things myself. I have friends over all the time and serve gluten-free food. When we're going out, I help with contacting everyone and make sure we choose a restaurant where I know I can eat.

I'm wondering about the probiotic. People tolerate different probiotics differently. Sometimes a probiotic that works great for one person makes another quite sick.

In the US, organic food is supposed to be non-GMO. There are quite a few studies showing that some of the genetically modified grains are more allergenic than natural ones. I don't know if that's the issue but it comes to mind. -
Thanks for sharing that tip about the Nori. I didn't know it could contain soy sauce/gluten. So far I've been OK eating it but I think I'll switch to sashimi and rice. I found that wonderful gluten-free San-J Tamari sauce in packets the other day so now I just have to remember to bring it.

Good catch. You do have to read labels carefully on the margarine. When I was dairy-free I think I found a whipped one from Smart Balance that was OK. The thing that was hardest for me was coffee creamer. I never did find one without casein and I don't much like goat's milk in coffee. I finally settled on soy milk. For ice cream, I was eating sorbet... -

I miss good, fresh-squeezed apple cider from living back east. You can't hardly find it here in California. I was drinking hard cider before I was gluten-free. Love the stuff! I usually have to go to a liquor store to find the brands I like best, Blackthorn or Magner's. It's not sweet like applejuice, a little fizzy, and it has a nice kick to it.... -

Welcome. I think you're a celiac and not an idiot! The second doctor who said dyspepsia or IBS is the idiot. Celiac can be an underlying cause of both. Most major brands of cider are gluten-free, including Strongbow, Magner's, Blackthorn, and Woodpecker, but you may be consuming more alcohol than you intend. Cider can be a bit stronger than lager. If it's a locally brewed cider, be sure they haven't added any malt. -

The absolute best medical "proof" that you can't eat gluten is removing it from your diet and feeling better.
