  9. i agree with jersey angel that it ends up being a personal decision. i will eat nutty rice cereal, which is not made in a dedicated facility b/c i haven't heard anyone who has had issues with them, they are now owned by enjoylife, and they use vigilant "cleaning" and frequent testing. one brand i will not use is Kame rice crackers. they claim gluten free...
  10. As Kaiti said...no real degrees to Celiac. However, based on how long someone has had the disease, their levels on intestinal damage can vary. People with celiac disease have a range of symptoms and noticeable "reaction times", so to speak. Some have quick, violent reactions. And others, such as myself, have slower, lingering reactions.
  11. yeah, as above, these things vary from person to person, but a fair amount of people here say their reactions to gluten are stronger after being gluten-free. my reactions are stronger and different in some ways. One of my gluten symptoms--brain fog, only started happening after going gluten-free. I rarely had it beforehand...not nearly as severe.

  13. Those kinds of stats makes me grateful that I was diagnosed. And it continues to motivate me to spread the word and encourage others with symptoms to explore it.   14. i agree with homemade--really easy... i made it on sunday night--and went with the orange zest and some of the fresh juice too.
  15. i can definitely vouch that if you are casein free--yogurt might 'tear you up!' as tiffany said, lots of casein in yogurt.

  18. I also think I am fructose intolerant right now...and regular sugar/candy definitely can cause symptoms. The celiac nurse I am working with right now actually brought that to light.   23. How long have you been gluten-free? If you are sure you gluten-free (food and products too), then it is potentially just your body still being in the midst of healing. If symptoms persist though, you may want to monitor to see if other foods and ingredients besides gluten are bothering you... I have been gluten-free 8/9 months and still have ups and downs...
