That's a good point! Come to think of it, I WAS taking a folate supplement from a rheumatologist when the B-12 was first tested and it read >2000. The doctor told me to cut back to a few times a week. The next reading--8 months later-- was 856 and I was no longer taking the folate. I agree--it's probably not the chicken or fish--it's the PREPARATION. I cannot do soy either. I emailed the supermarkets we get ours from and both registered nutritionists on staff PROMISED me that no soy or gluten was used in the preparation of the rotisserie chickens or turkeys...but now, you have me wondering....because I sure as heck am not feeling... -

Shauna, It makes sense to me. I never many heart palps, "racing" etc. until the last 3 years. I wore a holter monitor, had an EKG...the usual tests... of course, I am "normal" I attributed it to the gluten, adrenal fatigue and how very ill I became and to erratic dips in glucose levels. I am not diabetic, not even close. Tests reveal nothing unusual... -

Your English is just fine! From what I understand, celiac is frequently diagnosed in Finland and other Scandinavian countries; perhaps Iceland is starting to catch up. Perhaps it is not that the disease itself is rare, rather that people just aren't diagnosed properly. That is no different than here in the US. Many celiacs go undiagnosed for an average...
