  1. Jen, Yes, it is true that there is a higher incidence of people with Celiac having another autoimmune disorder, but it doesn't mean that everyone will have problems. I would say the most common and identified problems are thyoid and diabetes. However, there are many more that can be related....there is a section on www.celiac.com about "related disorders...

  12. If it is from corn, companies are NOT required to list it. Corn is not an 8 main allergen, so if it says modified food starch (and the source is corn), by law, it does not have to be listed. Same with potato starch, etc.
  13. lonewolf: gluten intolerance is not the same as Celiac. In general, Celiac refers to villous atrophy caused by an autoimmune reaction. non-Celiac gluten intolerance does not damage the intestines. However, in terms of maintenance and day to day living, yes, the treatment is the same.

  16. pubmed has no listing of any recent articles stating that Celiacs cannot have soy. There are articles that deal with overall food intolerances (i.e., multiple food issues) that include Celiac, but none that say that soy causes a Celiac reaction.
  17. Deb, the law was signed in August 2004, and the labeling law took effect Jan 1 2006. So companies had plenty of time in between before they had to comply (hence, which is why there was a delay in the actual effect date).
  18. momof3: To recap ----MSG is safe in terms of GLUTEN. In terms of other things---that is a separate issue that some have with it (as mentioned by RiceGuy). There are many who eat it with no problem, and others who are sensitive/allergic to it---separate from gluten. (side note: I eat it and do fine with it) But, to answer your specific question....

  20. Because of the 2006 Food Labeling Law, if it says modified food starch and doesn't list wheat, it is safe. If it has wheat, it must be listed. Its not necessarily a chain of gluten (not glutan!) ... its often corn starch, potato starch, tapioca starch, and of course, can be wheat starch---but will be listed.

And, a caveat to that , would be that the law was signed August 2004, and took effect Jan 1, 2006, so companies had plenty of time to start adjusting---considering that we are now 1 year into the law, and 2.5 years since it was passed. Not to say that they all did right away, by any means at all, but, this law had plenty of forethought and warning...
