ARCHIVED Could Diagnosis Be Wrong?
happygirl replied to ana's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
Ana, You have classic, textbook-case Celiac Disease. Your doctor is correct. Any flattening of the villi is indicative of Celiac (that is what Celiac is). You have positive bloodwork and a positive biopsy...your doctor is right when he said that this is definitively Celiac. You have what Celiac experts call a 'gold standard' diagnosis. It doesn... -

ARCHIVED Mcdonald's French Fries
happygirl replied to ShortStuff2309's topic in Gluten-Free Foods, Products, Shopping & Medications
swittenauer, about the fries, i believe the best answer is above (see my above post, esp the bolded part.) about the meat/cheese: I believe the ingredients are safe, but again, the risk of eating out at a fast food place is very high due to cross contamination. Laura -

ARCHIVED Pantene Ice Shine
happygirl replied to dionnek's topic in Gluten-Free Foods, Products, Shopping & Medications
Dionne, I don't personally have any of it, but if you could post the ingredients, I'm sure someone could help. Did you read the label-were there questionable ingredients? In general, its hard to say that a whole company (like Pantene, and all their many products) is gluten free...so it might be that some of their products are, but some are not. -
ARCHIVED Local Celiac Support Group's Leader Makes Me Nervous!
happygirl replied to Electra's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
Wow, that is extremely radical. Given that the FDA does not even have a definition for what defines gluten free, and there is no law or regulation for putting gluten free on a label, I find that information to be extremely dangerous, considering that since there are no regulations, it could say gluten free and actually not be gluten free! I think that... -

Please be careful! I used to waitress at an Applebee's and basically ALL of their chicken in their normal foods has either straight up wheat, or a soy sauce in the marinade (they come like that). They do have some "plain" chicken breasts but those have to be specially ordered, so please be careful. Let's just say that I worked there for 3 years during...

ARCHIVED Who Has Thyroid Issues
happygirl replied to cause&effect's topic in Related Issues & Disorders
Add me to the list of some sort of thyroid problems: normal TSH/T3/T4, but producting autoimmune antibodies (recently discovered). -
You are welcome! I just want to re-iterate that many on here DO successfully eat out, but, also wanted to acknowledge that it is normal to feel like you do. Its a hard balance....basically, you have to do what is most comfortable for you. Also, make sure your doc runs the full panel, including the tTG, which is highly sensitive.

ARCHIVED Graham Cracker Crumbs
happygirl replied to mandasmom's topic in Gluten-Free Recipes & Cooking Tips
I crush up any gluten free cookie or homemade cookie, including ginger snaps, shortbread, animal crackers, etc. Any works ... just depends on the taste you want. I also do this for cheesecake crusts...and then just follow any "normal" recipe and substitute my crumbs in. -

Hey Aimee, Welcome to the board! We are happy you have found us! It is a great resource and I hope it provides you with education and support. Let's see--first, how were you diagnosed with Celiac Disease (Celiac, without the "s")? Through bloodwork, biopsy, or both? I noticed in your signature that you have diabetes, which is highly correlated with...

I think this is normal. You have learned its important to be gluten free, plus you don't have symptoms, so its harder for you to tell. As someone who reacts to tiny amounts of gluten, I can tell you that your fear is *somewhat* justified: I had to essentially stop eating out because the longer I was gluten free, the more sensitive I became. On the other...

ARCHIVED Which Books Are Recommended?
happygirl replied to suebny's topic in Parents, Friends and Loved Ones of Celiacs
Check out the book in my signature---written by a leading Celiac physician and researcher at Columbia University's Celiac Center. I love this book! It covers the genes, the mechanicism of Celiac, related disorders, research, living gluten free, ingredients, what to do when you don't get better, etc. etc. It is a research-grounded book and is very up to date... -
ARCHIVED Newly Diagnosed
happygirl replied to JenD.'s topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
Jen, Welcome to the board ---- we are happy you have found us. Everyone takes different approaches...some go "simple/natural," some just start substituting foods, and some go somewhere in between. The best approach is what will work best for you. I was pretty much in the "middle" My favorite pasta is Tinkyada brand rice pasta....it is delicious!... -

Nicole, I don't have UC and don't have much to offer in terms of advice, but I wanted to add my voice of support. I hope that you find some answers and your health improves. Hugs to you---I know you must be frustrated. Do you have a good doctor (I hope!!!) I'll be thinking of you. Laura

ARCHIVED Colonoscopy/endoscopy
happygirl replied to Mal's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
Hey Mal, I'm 25 and have had 2 endoscopies, a colonoscopy, and two joint endos/colonoscopies since I was 22. I understand.... But, it really isn't that bad. You'll be under "heavy sedation" which has less risks than general anesthesia, and its a quick procedure. You'll wake up and probably won't have any idea that its already over. Good... -

ARCHIVED I Glutened Her !
happygirl replied to vampella's topic in Parents, Friends and Loved Ones of Celiacs
Char, Just wanted to add my voice of support. It happens...we do it to ourselves, our kids, our loved ones. The only thing we can do is learn from our mistakes! We all have specific instances burned in our brain that *help* keep us vigilant....I guess this will be one of yours, my dear! We have blips...and move on! She'll recover, and you'll be more careful... -
Jessica, You have a lot of knowledge about Celiac and were merely putting that knowledge and "lessons learned" to work for you in this instance. I don't blame you, and I would have done the exact same thing in both instances. Not worth the risk...who wants to pay for something like that? Good for you for sticking to your guns Laura
