  1. Good morning,

    As I eat rice crackers with PB on them for the 100th day in a row, I'm getting really bored with eating the same thing over and over.

    When I first started to post on this board (in 2005), I remember someone posting a list of foods to eat for breakfast, lunch and dinner, and others added to it. I can't find it now. Has anyone seen it recently???

    Hey stranger!!!! Good to see you again Carrie.

    My current craving is Vann's Waffles with PB and Jam. I alway have some brown rice in the fridge (cooked with Swanson's chicken broth) which is always handy for a quick breakfast with a fried egg.

  2. Redbridge is fairly solid but some variety would be nice every now and again. I had a Beer called Bard's Tale: Dragon's Gold a while back which was also made from sorghum. Are there any other beers I can get at my distibutor which are good? Or a site online?

    Unfortunately, the selection is slim. Bard's, New Grist and Redbridge are the current beers available. A year ago there were none, so we are pleased to have those. Perhaps next year will render some more surprises.

  3. I just spoke with the customer service there and she said that they were still testing...I don't know. I guess because I had a "build up" reaction to another OTC, I am once bitten twice shy.

    I did call, but it was some time ago. I can't find my old post. But, I want to call again and see what they say.

    Just called and talked to "Allan"...they do not add gluten, but they do not test for it either. They are in the process of testing and should have a definitive answer in a few weeks. (my scepticism overwhelms me <_< ). Let's remember to call in a few weeks. I still think it's a CYA statement.

    It does not bother me and I consider it safe.

  4. I know this sounds like a really boring thing to miss but after about 8 months gluten-free, one of the only things I really miss is couscous. I love the smallness of it and the way it absorbs any sauce you put on. I've tried quinoa and it's okay but it just doesn't do it for me.

    Is there any good replacement for couscous? I've looked around a bit but I haven't found anything. I would be so happy if I could find some.

    Although little consolation, but grits may be a good alternative. I cook stone ground grits with Swanson's Chicken Broth (instead of water) and add at the end whatever cheese I fancy at the time. Any type of herbs could be added (for a northern version :rolleyes: )

    It's great for breakfast for dinner with sausage/bacon and eggs.

  5. When I was first diagnoses, I had clumps falling out. My blood work indicated that I was low in Folic Acid and B-12. I bumped those up and the hair loss slowed and I had alot of new growth.

    I have since slacked off those supplements and the hair loss seems more noticeable. So, back to the Folic and B-12.

    From every one's post, there seems to be a common denominator.

    I am not sure whether this has been brought up or not (perhaps yes?). Since your husbands diagnosis, I assume that you have been cooking gluten free for the most part. Could it be that you have developed an intolerance to gluten yourself through eliminating it from your diet?

    Just a thought and I do hope that you get some answers soon.

  8. Hello, I'm new here and have a bit of an odd situation-

    My mother has been suffering from severe stomach pains for the last several months. For the past two weeks those pains have gotten much worse and she is alternating between constipation and abnormal bowel movements. Sometimes she passes undigested food.

    She is refusing to go to a doctor and is convinced she has celiac disease. She is 61, and has had bouts of stomach issues most of her life. I'm helping her try a gluten free diet, but I am concerned that this is NOT celiac- that it is something even more serious. She has had multiple polyps removed from her lower bowel and they were listed as pre-cancerous. She is very stubborn, though, and I'm at a loss. If it really is celiac, how long until we see her symptoms start to resolve? We've only been gluten free about five days, but I'm impatient and so far we've seen no improvement. I've also read a lot about contamination here, and since this is a test run, she doesn't want to replace all of her baking equipment, kitchen equipment, etc.- so does only eating gluten free food invalidate this trial?

    Worrying about her so much is really hard on me- I just want her well! If her symptoms continue after the time period that celiac would usually start to resolve, I feel I'll have more leverage to get her to see a doctor. I would be deeply thankful for any thoughts.

    You sound very devoted. She is lucky to have you.

    If your mother is convinced that she has Celiac the most simple route for you to take is a blood test. It is simple and it may resolve your doubt.

    A test gluten free diet is invalid if it is not totally dedicated. It is not the amount of gluten that is consumed, but rather the slightest amount of gluten that can set off the reaction which caused the damage to the small intestines.

    A dedicated gluten free diet for a months time may show some improvement if it is indeed celiac or an intolerance to gluten. It is often advised during this time to be diary light or to eliminate all together.

    If you have other concerns, I would certainly advise you to seek medical attention for your mother.

  9. I am so sorry that you have had so many mountains to climb during his short life.

    May symptoms that you mentioned, can be associated with Celiac, bloated belly, small limbs, etc. You can demand that you doctor do a full Celiac blood test, although they are not always reliable, especially in small children.

    You can try the diet for a month and see if his discomfort subsides. A positive dietary response is a diagnosis in itself.

    I do hope that you get the answers soon.

  10. Welcome,

    One week on the diet is a very short time to be free of issues. Many take several weeks and other take several months and even up to two years depending on the amount of damage you may have and how diligent you are on the diet.

    Make sure that you have checked your colander, scratched pots and pans, toaster and wooded spoons. As well, check your cosmetics, shampoos, toothpaste and lipsticks/balms. Gluten can hide everywhere.

    I would concentrate on eliminating the gluten. Then, if problems still persist eliminate one thing at a time so that you can identify what is bothering you.

  11. So I had a scare this morning, my fingers went numb and after asking a lot of people a lot of questions most people thought it was due to calcium deficiency.

    I have "Citracal Ultradense Calcium Citrate 250mg+D" and it's the weekend so I can't call the company.

    Does anyone already know if this is Gluten Free or know of one that for sure is. I can't do dairy or eggs so I don't know where to get calcium from. Also can't do oranges due to acidity.
