  3. Everyone handles a glutening differently. A few days to a few weeks. Hope your son feels better! About the school.... Just because they can or must accommodate does not mean that it will always be safe. Cross contamination and not following procedures can and does happen. Ask to be walked through gluten-free food handling procedures and offer suggestions...
  4. My Dad has that. It is genetic. Several of his siblings have "Bobble Head Syndrome". Nothing to worry about.
  5. Either/or. If you really are baking challenged, I would start with a gluten-free blend of flours, that way you do not have to buy all those different flours. I use Pamela's but others here have their preference. Keep the leftover flour sealed in the freezer and it will last for years.

  7. Colleen is right. The dosage I am taking is prescribed by my doctor. She even wrote new instructions for that additional 30 mg on Wednesdays and I have a lab recheck in six weeks.   8. If you extend your arms out straight in front of you and you seek trembling, you could be running hyper (my doc does this simple test besides listening to my symptoms and ordering lab work). Tingling? That is tough. It can be related to diabetes or celiac disease. Not sure about thyroid as I never had this symptom before my celiac disease diagnosis...

  10. Google gluten-free restaurant cards that you can download. These were handy and were written in several languages. The card really helped in Russia. Just carry extra food (gluten-free cereal-type bars, dried fruit, or nuts always) in case of an emergency. Do not count on the airline to provide safe food even if he orders gluten-free 30 days in advance...

  13. What? It clearly sounds like you have celiac disease with positive antibodies and proving with a gluten-free diet. At a minimum, a severe intolerance to gluten. You have 30 days to enroll in a U.S. health plan if your plan was terminated (special circumstances) so you do not have to wait for the enrollment period which is coming up and wait until January.   20. Well, you may have a cold coming on with a sore throat, but the other symptoms you described sound like celiac disease. celiac disease is an autoimmune disorder -- not an allergy. It can take a while for your body to ramp up. Everyone has a different response. Hope you feel better soon!

  24. We have never been glutened by plain canned veggies. We never buy creamed corn though. We purchase all brands -- whatever is on sale. I stock up in the Fall for our Earthquake kit. Last year's cans get donated to the food pantry. Enjoy!
