  1. Chelsea--Thanks!--I just wrote it down. I will use the vanilla, too. I have a small ice cream scoop that I use for cookies that will be perfect for this. In the spirit of this thread, I learned something new today--thanks again
  2. Chelsea--I'm being lazy here--what is that 3 ingred. recipe? I want to make them, too!
  3. Hi Rachel--I am corn intolerant, also. My Kinesiologist told me to avoid it back 2 years ago. I have tried it since--in the form of popcorn (organic/made myself) and as corn syrup in sorbet. Bad idea both times! It is true that it seems to be in everything. I just read every label (for everything, it seems!) and stay away from it as best I can. I think...
  4. Ooh Betty--that looks great! Thanks for sharing
  5. Sorry, but I didn't care for it! It was the first gluten-free bread that I tried--I bought the Brown Rice and the Pecan Raisin--the Pecan Raisin was acceptable only if toasted with a lot of butter. The regular Brown Rice--I did not like at all.
  6. Yes! Since I could not wait to stop taking the iron (because of the side effects), I began using a Centrum w/iron soon after I went gluten-free. The other reason was that I couldn't tell if the diet was helping my stomach while I was still taking the iron. The amount in the Centrum was sufficient for me once I began to absorb the iron from my foods.
  7. Lightheadedness was one of my first symptoms. At the time I was first tested, my hemiglobin was at 11. I could handle the lightheaded feeling then--but it was bothersome. Within 2 1/2 months, it dropped to 8. The doctor put me on iron suppliments which upset my stomach terribly. Luckily, Celiac was finally diagnosed 7 months later. After 6 months on...
  8. Michael--Thanks for putting that into perspective. Most interesting.
  9. What a dedicated young lady you have! I think it's great
  10. I have to say that most everything I learned about Celiac, the gluten-free diet and all that it entails, CC, dealing with relatives and friends on the subject, that I was not alone/crazy, and a million other things, I learned right here. I can't thank each and every one of you enough! A big thank-you to Scott for providing us with this board where we can...
  11. The tissue in the brain and the tissue in the small intestine are very similar. It's very common for people with Celiac and those diagnosed with IBS to have problems with depression. I suffered with anxiety and depression before I was diagnosed--it returns every time I get a gluten reaction for a few days. It helps me to, at least, know what it is and...
  12. Again, I'm guessing , but I also have become intolerant to tapioca flour. There are a few others on the board who are also sensitive to it. Welcome to the wonderful world of "food detectives"!
  13. Hi Mindy--that sounds like what happens to me when I've been glutened! I had anxiety and depression before I was diagnosed, and when I get glutened now, it comes back for a few days. Try to get as much rest as you can, drink plenty of pure water, and eat when you feel like it. It will pass
  14. Just a guess--do they have soy flour in them? Some (like me) can't tolerate soy flour. Hope you figure it out
  15. Hi--welcome! The test you had for Celiac 6 months ago were negative because you had been off gluten for so long. That really dosen't tell you anything. Do you feel better off gluten? I'm assuming you do, and that's why you were not consuming it. The positive response to the gluten-free diet is in and of itself proof of gluten intolerance. It is certainly...
  16. Yes--the rapid release is not safe for us--I bought it, but fortunately called and checked before I took any. Always best to call if you're not sure, we can't assume anything is gluten-free until we check it out. You can try www.glutenfreedrugs.com/ -- I am not sure how up to date their info is, though. Here is a list that I received recently--hope some...
  17. Hi Eugene--go here for the tests and more info on them-- Open Original Shared Link Hope this helps
  18. Hi--sorry you feel so yucky I would suggest eating something different--like rice bread toast, cream of rice cereal, gluten-free broth, tea, or any bland, cooked thing that sounds good to you. I would switch off the peanut butter and bananas for a day or 2 at least--if they have not helped by now, maybe they are not what your body is needing. Since I...
  19. That happens to me sometimes, too. I take Extra Strength Tylenol (NOT the Fast Acting--not gluten-free) and a warm shower. Try to get extra rest, if you can.
  20. Judy--Great to hear the MRI went well--was thinking about you this morning! Your Red Robbin experience made me sad, though. And on Easter, too I'll email you soon
  21. Hi Susan--Gosh. I understand your concern. I had hair loss to the point where I had patches that were thin enough to see my scalp. For me, I began to stop losing after 3-4 months on the gluten-free diet and vitamins. At that point, I had my hair cut so the spots would blend in better. It's been 10 months now, and my hair has grown back in pretty well...
  22. I get this symptom as one of the first signs that I have gotten some gluten. It's always from some sort of CC. Have you been having this for long? You may be getting some hidden gluten--like in your personal care products or eating out. Another thing to consider is that something else is disagreeing with you--soy, corn, and dairy products (to name the...
  23. I have only tried probiotics once, Culturelle. I started out ok, but within about 4-5 days, I got the rumbling and not-quite-D that burned. I found out that it may disagree with people who are sensitive to dairy--since I am and otherwise strictly dairy free, I stopped taking them and felt better very quickly (a day or 2).
  24. Soy flour is gluten free.
  25. Thanks for posting your delicious results--between you and Kasey's mom, I have a ton of good ideas! Now, I really need to buy an ice cream machine
