  1. You take *no* list as gospel, but rather understand the concepts that put things on the list (or have them removed) so that you understand what makes something gluten free or not. For instance, the oats question isnt answered by something being on the gluten-free list or not, you need to know about the chance of cross reactivity amongst celiacs and contamination...
  2. Gluten can't be "killed", as it's a protein. The portion of the protein that causes the celiac reaction is actually a small subset of the gluten protein, and it is very stable.   4. Oranges have never bothered me, and I eat them constantly. But some people are allergic, and some people just can't tolerate foods that acidic. He should listen to his body.

  7. when you say "soy or gluten warnings", what do you mean? the ghirardelli cocoa powder doesn't have soy as an ingredient, but is produced in a factory that uses soy, so they'll have a trace warning (but only on Open Original Shared Link), but it's not one I'd think twice about being worried over, unless you've got a horrendously severe anaphylactic allergy...

  9. unsweetened cocoa powder doesn't have soy (soy lecithin is used for making solid chocolate to emulsify the 'liquid'). there are dark chocolates available, also, that don't have chocolate - theo, michael cluizel, chocolate bonnat, to name a few.
  10. what about nut flours, seed flours, coconut flour, potato flour, and so on? or buckwheat flour, which isn't technically a grain?
  11. I suggest Thai Ginger, just off I-90, on the way back from hiking in the alpine lakes wilderness. So, how long of a hike do you want, and how much elevation gain? There's a lot of snow left in the area, so if you're not going to have crampons and/or snowshoes, you're going to have to pick carefully. Let me know what kind of distance/elevation you're looking...
  12. actually, your computer should recognize it without installing the software that came with it (part of the amusing thing that is usb). the fact that your camera *also* was not recognized suggests that it is a problem with the usb port, not the ipod. if you have, or know anyone who has, a usb drive (thumb drive, whatever you call it), try that as well. ...

  20. yes, damaged intestines can cause malabsorption of medication as well as food. celiac can cause depression all on its own as well, so that's a complicating factor. besides pharmacological methods (even the homeophathic ones), a well balanced diet (not too high on the carbohydrates, but seriously balanced), exercise, plenty of sunlight, and a regular sleep...

  22. yep, the on-call docs (particularly something like surgery) are separate. ER's are extremely pricey. I doubt you can contest the need to pay the doctor, but perhaps insurance will be covering some of it or there can be some price negotiation? never hurts to ask.
  23. the first few months (3-4), yes, you'll actively miss them. after that, you'll be nostalgic about them. but you can have waffles and there's no reason not to get yourself a waffle maker and start making them.
