I agree with what ursula said - direct exposure to gluten (say, from crumbs while you're making food, or from unwashed hands) should be avoided. Those are both sources of gluten that you can identify and avoid, which means they should be avoided. There is no direct, linear relationship between symptoms and amount of damage in celiacs. So, the answer becomes "you can't know without the biopsy". Yep - it's got barley, so it's not safe. As mentioned, there are a *lot* of rice milk manufacturers that don't use barley and are fine. There's also soy milk, almond milk, hazelnut milk, potato-based milk, and a could others I'm forgetting. -

I believe the ellipticals tend to be a bit more of a workout than a treadmill, and they are a bit easier on the knees - normally. One thing I don't like about ellipticals is the motion constraints - you're feet have to move in a set motion because they're on little platforms, and if you're not built to the machine's standards... you can avoid the 'not a morning person' issue by packing your lunch/breakfast the night before. leftovers are a good place to start, but things like tuna (I make mine with avocado and tomatoes, and eat it with tortilla chips) or eggs (I like mine on rice cakes - not the salt-free rice cakes, because those taste like cardboard) also need only take 5-10 minutes...

you do everything you can to not fall off again. you have complete control over whether or not you stick to the diet, as you are the only one who operates your arms to bring food to your mouth. that control may need some daily practice and exercising to become stronger, but it's up to you to get it there. it's also up to you to be aware of your weaknesses... -

You can also put 1/4 cup regular popping corn in a lunch size brown paper bag along with a pinch of salt and a tablespoon of brown sugar.
