  1. no heat yet - ice. I'd give it at least a week until you worry. ice, anti-inflammatories, and try to avoid doing things that obviously make it hurt (or minimize them).
  2. wheat free does not equal gluten free. many flavors of luna bars have malt, and all have oats.
  3. mango, I'm glad you like it! I use mashed avocado in my lasagna instead of ricotta (but in much smaller quantities) as well. I've found raw recipes a good source for intolerances. I'd never have found a replacement for ranch dip/dressing without it (though it does use cashews).

  5. "The best" depends on what you're looking for - I'm fond of help protein powder, as I try to keep my soy consumption down, and it has a good fat ratio. I also like rice protein powder for the taste in smoothies. There's a quinoa/millet powder that is interesting in smoothies as well.

  8. I've had them - they're an aquired taste and, in my opinion, work far better with savory food rather than sweet, but I like them.
  9. My doctor also noted that a pneumococcal vaccine was important as celiacs tend to be more susceptible to more severe effects from it (blood borne, not respiratory).   11. I have never seen anything specific to suggest that odd cholesterol (in the good way) is related to celiac, but if you're not absorbing fat properly... maybe...? One thing though, if you're going to have blood tests, you MUST BE EATING GLUTEN for them to be valid.

  14. 200ppm is the CODEX standard, which many people find too high. 20ppm is likely to be the US standard, whenever they decide on it. Besides production plant contamination, there's field contamination, as most fields grown oats and wheat in rotation, and there's *some* wheat in the oat crop itself. I would expect that most starchy substances, in our body, are going to release free glutamate, as glutamate is naturally generated from glutamine in the body, and is necessary in the urea cycle. While I haven't done all the research you have, I'm pretty positive that all glutamate isn't equal.

  23. What you eat isn't anyone else's choice. They don't have to believe you, they don't have to know the same things you do. They merely have to accept your choice. You tell them "I choose to avoid all contamination. Period. End of discussion." if they are being such ninnies about it, and stick to that. Then, bringing your own food, or eating ahead of time...

  25. what is the seven day challenge for? seven days isn't long enough for antibodies to show up on a blood test or for damage to show up on a biopsy. so if it's just to see if you react to gluten, you've already done that, and you can cut the experiment short...
