Going gluten light really isn't going to tell you anything. You need to be *completely* gluten free for the dietary challenge to be a valid test, and you need to give it some serious time - around a month or so - to come to solid conclusions on it. :/ -

High fiber carbs that are gluten free: quinoa, amaranth, buckwheat, teff, montina (in bread), many vegetables, beans, lentils, flax, hemp seed, etc. Honestly, I don't find bread to be the best way to get carbs, or fiber. tapioca, iirc, is a root, not even a grain, and is definitely unrelated to wheat and safe for celiacs. there are a few people who do not handle tapioca well, but that's the exception rather than the rule. (heh, so are all of us, though. ) -

I would strongly encourage you to get a copy of the bloodwork that your doctor did. The tests than ran may have been next to worthless if they didn't run the complete set. Interesting. I know some people - regardless of celiac status, are sensitive to nosebleeds. My husband certainly used to be, when he was a kid, and it apparently just has to do with the lack of robustness of the blood vessels in his nose. The water spots and film are salt deposits (not NaCl salt exclusively, of course, but the salts found in your water supply, all the more so if you have a water softener). If you can't get tested via blood chemistry, testing via the dietary challenge is a good route! Make sure to stay 100% gluten free, avoid contamination, and *be patient*! You'll probably want to stay gluten free for at least a month to see if it makes any difference.

It's perfectly easy to gain weight going gluten free - not only are you now absorbing the food you're eating, but you may find that the substitutes your eating aren't any more calorically economical than anything you ate before. Often times, it's far worse! -
I didn't notice nearly as much improvement as I wanted until I cut out dairy as well. I discovered, via a strict elimination diet (I don't recommend my method to anyone) that I was casein intolerant.

While I find it hard to maintain this that closely at all times, 30/30/40 really is a good stabalization point for me. Yeah, I've been busy. Lots of stuff at work, and doing more fun stuff after work (skiing, hiking, dancing, game nights with friends, etc.) have kept me pretty busy.
