Eh... you get used to the layout after a while, at least in the ones I've been to. As for Living Without - there's only four issues a year, I believe, so it's not always in the store, only shortly after a new issue has come out. -
It affects my bowel a bit (I think towards the C end, but I don't remember), but definitely not that severely. It's fairly common for impending menstruation to affect the bowels though - those hormones are powerful things!

While I don't know about the snickers/milkyway/etc. variety, most bar form of pure chocolate is gluten free. always always always read the labels, but most chocolate is cocoa, cocoa butter, sugar, and soy lecithin for the processinging, with milkfat and milk used if it's milk cocolate. Since September? Six months? There's nothing in the body for the immune system to react to, so it's not going to produce any antibodies for the blood test to pick up. In someone who heals quickly (and that's often the case for little kids), all intestinal damage can be healed by 6 months on the diet. So, I'm afraid the test is going to be pretty useless... -

for the banana bread, you can, but the results won't taste the same. the flour choices there were specifically due to the flavors of gluten-free flours - many are stronger tasting, sometimes more bitter, than wheat, and my husband hates most of them. the texture will change a bit too, but I think it will still be reasonable. for the rice pudding, yep... -

Cultured milk. Basically, very similar to drinkable yogurt, but the cutures are somewhat different. It seems odd the first time or two, then you get hooked. (And then you regret it when you learn you can't have dairy. :-/) Trader Joe's carries some, Whole Foods and most other health food stores. Silk is making something similar from soy these days... -

There isn't any Gluten-free Casein-free string cheese - you need the dairy protein to get the proper 'texture' for string cheese. Sorry. :-( Perhaps he'd be willing to switch to dried fruit (like apples). -

You can make an extra large batch of sauce when you *do* cook from scratch and freeze (even just in a ziploc bag). My italian MIL does this. :-) -
I have it (got it ... two years ago), and I like it. It has plenty of still-useful information, including a lot of good contact information, a few recipes, and some general reference stuff.

It's hard to say off of white rice alone. If white rice didn't give you a problem and plain brown rice did, then I'd assume the bran (the extra fiber, really). But have you ruled out cross contamination?
