icelandgirl replied to Pegleg84's topic in Traveling with Celiac Disease
Hey Gemini! I haven't lived there since I was 8 and have always Gome back I'm the summer...so I consulted the expert (mom) and she said fall. Early fall especially. If you go too late it starts getting dark so early. I still remember walking home from school at 3 in the afternoon and it was dark out. Also...take me with you?? -

icelandgirl replied to Pegleg84's topic in Traveling with Celiac Disease
Lol Gemini! I would love to do that. Nikki...it sounds like you are describing flatkokur. Yum...my favorite with butter and cheese. My mom is headed to Iceland on Thursday...going to see if she can find out about gluten free ones. I've never found anything comparable here..even when I are gluten. -

So great to hear such good stuff about my homeland. I haven't been since my diagnosis but have heard that they're pretty gluten free savvy. -
ARCHIVED Soy, Estrogen Issues And Gluten Free Foods
icelandgirl replied to Nikki2777's topic in Related Issues & Disorders
Hi Nikki, I share your concerns. I first gave up soy and dairy last summer in hopes that it would help my gut issues. I've since added back in some dairy without issues, but not soy. Mostly because of what I've read about soy related to thyroid and hormones. Last year I had a mammogram come back with a concern and ended up having a biopsy. That was... -
ARCHIVED Neuropathy Getting Worse
icelandgirl replied to mbr22m's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
Aww...that's such a hard way to feel. ((((Hugs)))). I've felt the same way and absolutely hate going to the Dr. I get so much anxiety going that I have to sit in the waiting room doing deep breathing until they call me. Then they're so impressed by my BP...wow 105/67...or something similar. What they don't realize is that I've had to get myself into... -
The What's For Dinner Tonight Chat
icelandgirl replied to jess-gf's topic in Gluten-Free Recipes & Cooking Tips
Last night we grilled burgers and had them on my new favorite gluten free buns from Outside the Breadbox. These are the first buns that my hubby has liked. Tonight I'm making a chicken taco salad. -
ARCHIVED Ketogenic Diet Anyone Tried It ?
icelandgirl replied to foam's topic in Food Intolerance & Leaky Gut
Not doing this diet but am following the thread out of interest. These coffees sound so good! -
I'm so sorry to hear that. Our fur babies are such a big part of our lives and losing them is very painful. I have 3 human babies now, but my first baby was a big fur ball of love. I still miss him 11 years after he passed. I hope that your 16 years of memories with Grommit will comfort you in this time of sadness. (((((Hugs))))

ARCHIVED I'm Back And I'm Sick
icelandgirl replied to bartfull's topic in Coping with Celiac Disease
Aww...A grilled bread sandwich is no fun! I'm wondering of I'm having a dairy issue too. I reintroduced it a few months ago. First a splash of creamer in my coffee...then a little vanilla ice cream. Finally a little cheese. I seem to do OK with a little, but yesterday I had all 3 at some point and today had to drag the kids home from the park ASAP so... -

icelandgirl replied to jess-gf's topic in Gluten-Free Recipes & Cooking Tips
Yum! Love turkey breast in the crock pot. We're headed to a minor league baseball game so I'm doing a quick dinner...pizza buns and roasted summer squash on the side. -
Hi cyclinglady...I know. I've been swinging hyper to very hypo over the past few months. It stinks. But when someone says they feel great I get really excited and say I want some of that too!
-
Gosh Nicole...I'm sorry. (((Hugs))) I don't have any answers for you. Just wanted to say that you are not alone in having ongoing struggles. I hate going to Dr's as well. But I wonder to myself...is this celiac related, Hashis related or is there something ELSE wrong with me? Urgh! Hang in there...I hope you get some answers. (((Hugs)))

Congrats Beth! What were you on and what are you on now? I want to feel great too!

The What's For Dinner Tonight Chat
icelandgirl replied to jess-gf's topic in Gluten-Free Recipes & Cooking Tips
We grilled burgers last night too and some zucchini. Yum! Tonight we are having my kids' favorite...coconut flour crusted chicken tenders. I'm serving a tossed salad and roasted veggies with. I had some baking help today since school is out and we baked up chocolate chip cookies to have for dessert. -
ARCHIVED I'm Back And I'm Sick
icelandgirl replied to bartfull's topic in Coping with Celiac Disease
I'm so glad for you that the blood is gone! Hoping you get all better in the next week. When I get hyperthyroid I have insomnia and it's the worst. Bummer about the ice cream. Since adding back a bit of dairy I've stuck with Breyers natural vanilla...but I do worry about the cc possibilities. -

ARCHIVED Something Going On In Addition To Celiac Disease?
icelandgirl replied to Valerie2622's topic in Related Issues & Disorders
I'm so glad the hug helped. I've got lots of those! For thyroid you would also want Free T3 and Free T4 along with 2 antibody tests: TPOAb and TgAb. Ferritin is a measure of the stored iron in your blood. From what I've read having low ferritin can be the first indicator of iron deficiency anemia. Having a rock bottom number like you and I have is... -
ARCHIVED Something Going On In Addition To Celiac Disease?
icelandgirl replied to Valerie2622's topic in Related Issues & Disorders
Hi Valerie... I'm so sorry to hear about your ongoing struggle. That's so hard! I will tell you that after going gluten free I initially felt better and then spent several months feeling a whole lot worse until things improved again. I've heard others on here share that experience as well so maybe it is part of the healing. My first thought was thyroid... -
ARCHIVED Petrified, Supraclavicular Node Enlargement & Gastric Symptoms... Cancer?
icelandgirl replied to designerstubble's topic in Related Issues & Disorders
Hi and ((((hugs))))! I'm so sorry that you are having these worries. I understand as I am the type to worry and Google and diagnose myself. Ugh! I do think it's good that the Dr didn't speculate. In my 20's, prior to having an MRI done, my Dr at the time told me that I had either a brain tumor or MS. I was completely devastated...turned out I had neither... -
That's so great! So happy for you!
