  1. I can't go near the bakery in my grocery store or I'll get nauseous a few hours later. I've never had a full blown attack from this, but I can see how someone could. Light nausea is usually my first symptom.
  2. If you don't tell them the pasta is "special" I'm pretty sure they'll never notice. I've served it to guests who have questioned me on why I was eating pasta since it has gluten in it. They thought it was the real thing. We love Tinkyada.
  3. I use McCormick brand spices. They will clearly list gluten on the label if there is any. I have never had a problem with them. I generally add things like italian seasoning and garlic to my italian foods. I'm not italian though, so I may be way off.

  7. Welcome! Try Tinkyada pasta. It's a board favorite. I think you and your kids will be pleasantly surprised. Just don't bother telling them that it's gluten free.   9. Actually, it can be gluten that quickly. It took me about two hours of no gluten for my major symptoms to lessen. I used to snack constantly because I wasn't absorbing any nutrients so I was always hungry. I'm sure it was the constant barrage of crackers, sandwiches, pop tarts, etc. that made me so ill.

  14. I just wanted to ditto Barb's recommendation of the NY style foldable crust recipe. It's by far the best pizza crust we've tried yet and it's really simple to make.   15. Is it possible that a vitamin deficiency could lead to nosebleeds? I mean, since gluten in a Celiac's diet can lead to vitamin deficiencies. I don't know if this is the case, just food for thought. *edit* I just looked it up online and vitamin K deficiencies can cause nosebleeds.   16. The protein found in oats is very similar to the gluten protein. Some Celiacs do react to pure oats. I wouldn't see any need in putting him through a dietary challenge. Actually, not having a diagnosis, as Tiffany stated, may save you some headaches in the long run. Celiac can make it very hard to get life/health insurances in the US.   18. There are several of us, like me, that can eat large quantities of gluten without any immediate symptoms. However, if I get just a crumb then I'm sick. It kind of seems like my system just goes on overload when I've eaten large quantities of gluten and it shuts down.   25. Ooohhh... Perhaps you could use the pudding instead of the mayo??? Or maybe do half pudding half mayo??? That would cut down on the fat content I imagine and it would probably be really good if it turned out. You could also try subbing the instant pudding powder for some of the sugar.
