About 10% of celiacs react to oats (even gluten free oats) like they do to wheat gluten. A high percentage of celiacs cannot tolerate dairy, either the lactose or the protein casein. There are other grains besides oats you should be eating. Can you do corn? What about buckwheat,, tiff, quinoa? -

On the other hand, it could be the case that the way helminth therapy works (at least for some) is not based on a particular biochemical compound or compounds they secrete but the dynamic way these parasites interact with the human immune system. The problem I see with your theory is that hookworm and tapeworm infections are relatively rare in the population of developed countries in modern times. It is not unusual at all to not see any obvious damage during the scoping itself. This is usually the case unless the damage is advanced and severe. At any rate, you should now be able to start the gluten-free diet since you have had both kinds of testing done. Refer back to Scott Adams' post on The Gluten Free Diet 101. -

For a lot of people, having an official diagnosis of celiac disease makes it easier to stay on track with the gluten-free diet. Demi01, I would not assume that consuming small amounts of gluten is safer if you have NCGS instead of celiac disease. It depends on a lot of things. Just because a small amount doesn't seem to bring on noticeable symptoms is not the same as saying no harm is being done. -
