I missed the slicing of the bread - hubby did it while I went to store but he said he thinks he noticed a difference when slicing it in the texture and it looked better than usual. I'll update again after I see a slice - right now they are wrapped & in the freezer. -

I worked for a small company which spent money on an efficiency/money consultant...the final end was we lost our water cooler due to expenses (no lie!) and the fella who recommended that we hire the consultant lost his job as the owner of the company hired the consultant in his place! Talk about biting you in the hiney! To further add insult to injury...

Well I used the Expandex in my gluten-free bread - and we'll slice the bread when it gets cool and I'll update you as to the texture, taste, etc. of this experiment. As far as I can tell, the dough was "springier" than gluten-free dough regularly is and it shaped itself better in the baking pan and it rose nicely. -

The Amaretto (as long as it's Originale - old name was DiSarno) is gluten-free and they emailed me that info earlier this year. -
Not to be a "wet blanket" but can we rely on a company's info without questionning it at regular intervals that their receipes or methods remained gluten-free from one year to another?

I totally agree with a requirement like this - for everyone's sake. It seems that the general population doesn't even know that non-glutenfree bread is made with wheat even. It's sad but true. -

another point as to why it's best to use gluten-free lotion: most people apply lotion with their hands....when you are at beach or pool you don't apply it and then rinse your hands off. You want the lotion on your hands to prevent burn/sun damage. Children will often put hands in mouth, and people will then grab something to eat. It'll get transfered...

This might be a reason to consider NOT getting an official diagnosis: some of the people on this board have had experience of being denied health/life insurance or getting hit with heavy premiums for having "official" celiac diagnosis..... -

For my husband's case, his body took a beating from the years of misdiagnosis...and the pins and needles started after going gluten-free, but it was probably inevitable. It hasn't gone away & it's been a couple of years and he goes for B12 shots and takes sublingual B12 as well. I have no explanation for this. -

Be careful with coconut as the fat in it is delicate and goes rancid quickly so if you see it, make sure it's fresh...a lower price could mean the merchant is trying to get rid of it, it could be old. I've eaten rancid coconut and was violently ill from it (like food poisoning). -

As a hint, you could mix butter, vanilla and cream cheese together & freeze it for short-term future use if you bake a lot. Or should cream cheese not be frozen?....just a thought.
