  2. There are lots of flour options. What can you eat? There are corn, potato, garbanzo, buckwheat, tapioca.... versions of flours. If you give us a better idea of what is OK, we may be able to offer some solutions.
  3. I'm curious if you-all had a defined elimination diet designed by a nutritionist/naturopath, or if you designed your own plan. Or just said "OK, I'm not eating potatoes for 2 weeks, and I'll just see if that helps".

  8. Don't worry about the chemicals, they're just chemicals. It's the proteins that you need to worry about, and they should be the same names as are used in food.

  11. This seems very unlikely. Although some research has shown that Celiacs have a higher likelihood of having soy and/or casein intolerances, it's probably because these are big ol' hurkin' proteins and difficult for your body to digest. Anyone who has any kind of leaky gut issues will be allowing some of these proteins will be escaping into the bloodstream...

    Hi Azzie, welcome! If I'm asked to go to a restaurant where I feel there's a high possibility of getting glutened, I call ahead and talk to someone. If I have a say in where we're going I choose a restaurant that has a low probability of cc, either because of the type of food, or because they know me. I get a headache within 1/2 an hour of being glutened...
  15. Hi Aimee, I agree with making your house gluten free. You can use this as an opportunity to teach your kids about the value of reading labels and understanding what goes into their bodies. You can explain to your kids about chemicals and additives and how some foods make mommy sick so she tries to not eat foods that aren't healthy, and she never eats...
  16. If he had chicken pox, he should be able to get an antibody titer to show that he's immune. Although that virus is one that never actually leaves your body, so maybe that confuses a titer. Not sure. Or maybe medical records documenting that he had the disease.

  18. Jerry, I love the way you're posting every new experience. I'm sorry you're having these roadbumps, but it's kinda fun to watch you go through them (since most of us have as well).
  19. I think this is the key point. As with everything in life, you make choices based on a risk/benefit formula. I risk getting [X] from a flu shot, or I risk getting [Y] from the flu. I have asthma. For me the [X] is very nebulous and undefined, the [Y] is dying. I get the flu shot.

  21. Ya know, it's hard to diagnose someone after they've gone, but the things you describe would certainly fit the picture. But I suppose they could fit other pictures as well. Maybe he was trying to deal with his physical discomfort by using Jack Daniels. I self medicate for fatigue by drinking extra coffee.

  23. Vegetables, fruit, brown rice, corn (popcorn!), if you start making your own breads add higher fiber flours to them. I put flax seed meal in everything I make (I actually like it )
