Need An Allergen Free Birthday Cake Recipe

My baby is turning 1 in a week and I'd like to make her something that at least looks like a birthday cake for her party. I know I won't be able to make her a real cake with all of her restrictions. Does anyone have any idea what I could make that looks like a cake? I thought about doing sweet potato with brown sugar in a cupcake paper, but I don't know what to do for icing. I'm just at a total loss.

Its for banana bread. I make jumbo muffins with it. It makes about 9, bake about 20 -25 minutes. Reduce time for cupcake size. They are good. I posted my comments there so be sure to read it (its the only one). The recipe calls for rice flour but I used sorghum. I used almond milk but you can even use water. You can stir in whatever add-ins you want. I stirred in choc chips and raspberries to make the muffins different. I found that if you let eggless batter (substituting flax) sit about 15 minutes before baking, it rises better but you don't have to. Peanut butter frosting would be good on these. I put pb & jelly on mine.

Tip: freeze your bananas when you get too many that are getting spots then thaw and bake the recipe. It takes 3 bananas. I just squeeze them out of the skin like toothpaste. Mini muffins would be good for her to nibble on too. :P

For frosting, I posted 2 sites on the frosting thread. I think you will be able to find one that will work.

If that doesn't sound like the right thing you can try this:

They have oats but you could adjust the recipe. She lists an alternative flour for each one. They take alot of ingredients but are really good. I thought they tasted like gingerbread and hubby said apple crisp. I used chopped dates. I didn't think the chocolate chips were good on them. They are chewy like bars rather than soft like brownies.

Both recipes are/can be: rice/soy/corn/milk/egg/apple/gluten-free

Need help...let me know ;)

What about some kind of purreed fruit ? apricots? with oat flour? or coconut flour? almond flour?

We haven't tried soy flour yet (she had a violent reaction to soy formula anyway) and I don't have any way to get quinoa floua before this weekend. It almost seems as though she reacts poorly to everything we feed her. Any clue what I could sub for the rice flour? Other than that I think I could adapt it for her other allergies.

I don't bake much with coconut flour or almond flour but you could try it. Also you might try just the the starches. There is a book out by Ryberg (sp?) that only uses starches in the recipes. Experiment with 1/2 a recipe.

Maybe buckwheat? I don't know if you've tried that yet, it's not actually a grain. Or a nut flour or mild bean flour if those are ok things. Does she react to starchs like tapioca or potato?

We haven't yet tried tapioca. White potato MAY or may not give her hives. We're not sure. She has so many restrictions and even more uncertainties.

It has alot of substitution recipes that might help.

There is a carrot cake that doesn't have flour(weird?) but it has 1/2 cup honey you may need to sub and it has 1 1/2 cups apple juice- you could sub Welch's white grape juice. It has raisins.

If you find a recipe you can sub baby food like apricot/pears for the applesauce.

This might work if you substituted coconut oil for the butter, a bit of flax for the egg yolks, and whipped gelatin for the egg whites.

I just altered a recipe I have and tried it. So I will rename it. Its only 1/2 recipe ;)

Chocolate Banana Cupcakes

1/4 tapioca flour (same as starch)

1/4 cup potato starch

1/2 T. ground flax

1/4 cup sugar

2 T. baking cocoa

1/4 tsp. baking powder

1/8 tsp. baking soda

1/8 tsp. xanthan gum

dash salt

Whisk all together in a bowl. In another bowl, whisk together the wet ingredients.

3 T. oil

1/4 cup banana, mashed

1/4 tsp. vanilla

3 T. water

Beat wet ingredients into the dry (I just used a fork). Add goodies like nuts, coconut or chocolate chips. Just a few. ;) Recipe makes 4 cupcakes. Bake at 350 degrees about 15-20 minutes or until toothpick is dry.

I thought they turned out good since the ingredients are limited due to allergies. I melted peanut butter and chocolate chips together to spread on top.

Tweak it all you need to. I am not crazy about bananas with the chocolate b/c I like my chocolate all by itself.

You could try all tapioca to see if that works or some arrowroot starch too.

But they LOOK like a cupcake B)

One more, from my local group. This is her entire post.

I combined two recipes I found online and came up with these muffins for breakfast today. I always wonder how "off" my palate is, now that I've been eating Gluten-free Casein-free baked goods for a while, but I think these really did taste good. If anyone tries this recipe out, will you please let me know what you think?

Gluten-free Casein-free Blueberry Muffins

3 room-temperature eggs

1/4 cup coconut oil

1/2 tsp vanilla

1/4 tsp sea salt

2-3 Tb honey

1/3 cup coconut flour

1/2 tsp baking powder

2 Tb coconut milk

2 Tb water

1/2 cup blueberries

Preheat oven to 375 F and line 7 muffin cups with your favorite paper cups (or use a silicone pan). Fill the remaining muffin cups about 1/3 full with water.

In a medium bowl, whisk the room-temperature eggs until well combined. Drizzle in the coconut oil, whisking constantly to combine very well. Add the honey and vanilla and whisk until smooth.

Sift the coconut flour into a separate bowl, then whisk in the baking powder and salt.

In a small glass, combine the coconut milk and water to a liquid with the consistency of cream.

Add the dry ingredients to the wet mixture and whisk until smooth. Slowly add the coconut cream water mix 1 Tb at a time, stirring after each, until batter is runny enough to flow off of spoon in a thick stream (it shouldn't fall off in clumps). Stir in the blueberries.

Spoon mixture into paper cups, filling each to just below the rim. Bake at 375 for approx 15 minutes, or until tops are golden brown. Makes 7 muffins.

You could substitute butter or your favorite oil for the coconut oil, and agave nectar for the honey.

Banana Muffins

1 large mashed banana

1/4 cup shortening

1/2 cup sugar

egg sub equal to 1 egg

2/3 cup potato starch

1 cup tapioca starch (or do all potato)

2 1/2 tsp. baking powder

3/4 tsp. baking soda

2/3 cup milk sub (I'm sure water would work--or a safe juice)

1/2 tsp. salt

1 tsp. vanilla

1/2 tsp. xanthan gum

Topping

1 Tbsp. brown sugar

preheat oven to 350. Mash banana, add shortening, sugar and egg sub. Add remaining ingredients and mix well, removing all lumps.

Fill greased muffin tins 2/3 full or line with paper liners. Sprinkle brown sugar on each muffin.

Bake 15-20 minutes till lightly browned and a toothpick tests clean when insertrd in muffin.

Based on a recipe from The Gluten Free Kitchen by Roben Ryberg.

Ang--I found a frosting recipe in Cooking Free (Carol Fenster) that might work tweaked--

Chocolate Chip Frosting

2 cups gluten-free, dairy free chocolate chips

1/2 cup honey or agave nectar

1/4 cup milk or sub --(I'd just leave it out and use more nut butter if she can tolerate it)

1 tbsp. butter, margarine or nut butter--(I'll bet all nut butter would work fine)

1 tsp. vanilla

Place all ingredients in glass bowl and microwave on medium for 2 minutes, stopping and stirring after 1 minute. If you prefer smooth frosting, process in food processor.

Use immediately or it will begin to harden.

I tweaked the chocolate banana cupcake recipe and this is the new recipe. Really good without the banana.

Chocolate Peanut Butter Cupcakes

1/4 cup tapioca flour (same as starch)

1/4 cup potato starch

1/2 T. ground flax

1/4 cup sugar

3 T. baking cocoa

1/4 tsp. baking powder

1/8 tsp. baking soda

1/8 tsp. xanthan gum

Whisk together in a mixing bowl. Beat in with a hand mixer the wet ingredients:

2 T. oil

2 T. peanut butter

1/4 tsp. vanilla

1/4 cup water

Stir in some chocolate chips if desired or sprinkle on top before baking.

Spoon into 4 cupcake liners. Bake 350 degrees for about 15-20 minutes.

Here's a recipe for a cake with only 3 ingredients, (Even looks good check out the photo)

Eggs, Sugar and Corn Starch I'm sure some other starch (Potato, Tapioca) might work as well.

You guys are absolutely wonderful! I will spend this week experimenting. Perhaps I will talk to her pediatrician on Tuesday about introducing egg. She wants us to wait on most of the high allergenic foods since she has so many allergies, but I'll see what she says. Either way I have some egg replacer on hand from when I was on the elimination diet while nursing her. Thank you thank you thank you! My little girl WILL have a real cake now!!! :)

You've gotten some great ideas from the posters here. :) I hope that something works out for you! IMO, I wouldn't try the eggs.

Thus far the only things we know for absolute sure to be safe are: sweet potato, broccolli, spinach, squash, carrot, green bean, peaches, apricots, pear, pineapple, banana, beef, chicken, turkey... I know, not a very promising list. I'm willing to take some minimal risk for her cake. She has never had a major reaction, just a rash usually if we give her an allergen. It's also possible (but not likely) that she isn't allergic to anything other than milk and is actually allergic to the dog. There are so many foods that we've been terrified to try. I'm sure she's not nearly as limited as we have her now. I'm just super scared to try new foods. She gets SO rashy when we give her something she's intolerant to. She also gets hives with some foods.

I'm sure there's someone out there who's figured out how to make a cake out of sweet potato and pear puree or something! I'd try the specific carbohydrate or raw food diet recipes, those are bloody ingenious. Didn't somebody say they made a flourless carrot cake?

Yes, I do the SCD baking. I have made a carrot cake and spice cake that were amazing. I use almond flour (meal). Just made blueberry muffins and a (tastes like the real deal) grain free pound cake to take to a dinner party tonight. I am taking salad and pound cake. She is going to make a gluten-free chicken dish, but just in case I learn it could contain gluten (she knows about cutting boards and teflon even), I can have salad and pound cake for dinner....not bad. ;)

      @KathyR37, I would suspect that in addition to gluten intolerance, you have other food intolerances/sensitivities. This is very common in the celiac community. The most common offenders are oats, dairy, soy, corn and eggs with dairy and oats being the big two. Have you considered this? Have you tried keeping a food diary to detect patterns?

      thank you for your advice.   I have always taken them and I use Stonehedge because they are in a glass bottle, but don't have to be refrigerated.  I also like they are 3rd party tested and state gluten free. But you never know if something better has come alone over the years.

      Thank you for your response. I have already learned about the info you sent but i appreciate your effort. I am the only one in my family cursed by this disease. I have to cook for them too. I make sure that my utensils are free of gluten and clean after using them for other food. I use non-porous pots and pans and  gloves when cooking for them. One huge problem I have is a gag reflex out of this world and if something doesn't taste good it is not going down. Most commercially made breads and such taste like old cardboard.Pastas are about the same. I did find one flour that I like and use it regularly, but it is so expensive! All gluten free food is way more expensive. I only eat twice a day because I cannot afford to buy all that. We live on a very low income so my food purchases are quite limited.

      I am new here but celiac disease is not new to me. I was diagnosed with it at age 60. At the time I weighed a whopping 89 pounds. I was so ignorant to celiac so I buried myself in learning all about it and looking for food I could eat. I lost so much weight and stayed sick all the time. So to combat the sickness I was give all sorts of meds for loose bowels and vomiting. All that just made me sicker. Eventually I chucked it all and went back to eating like I had all my life. Now I am from the south and biscuits and gravy are a big part of our food, as are breaded foods, pasta, and sandwich bread. Through the years I would try to do the gluten free thing again and am doing it now. It has not helped any. Within and hour of eating I have to run to the bathroom. I am now 75 and am wondering if I should just forget it and eat what I like, take Immodium and live the best I can. I cannot eat before going anywhere for fear of embarrassing myself. Family and church dinners are out of the question unless I eat and run straight home. I am so frustrated I just want to sit down and cry or throw something. Does everyone go through all this?
