I thought it might be fun if we had a thread where we shared what we're cooking up for dinner:) I am not an experienced cook so coming up with gluten free menus for me and my boyfriend feels like a challenge. It's also weird since I only started eating meat since my diagnosis, so I have 0 experience preparing meat.

Tonight I'm going to try that Tinkyada spiral pasta with some gluten-free pasta sauce and gluten-free meatballs I got from TJ's.

I love Tinkyada brown ride spiral pasta. I like to stir fry some zucchini, onions and red peppers and then put it in with the pasta sauce and pasta. It makes a great fast meal

On tonight's menu is gluten free nitrate free lamb sausages, baked sweet potatoes, boiled cauliflower and cabbage salad. For the cabbage salad I chop green cabbage, green onions, fresh cilantro, diced avocado and mix with lemon juice, sea salt and olive oil. Simple really.

I have to disagree with you here! Wolfie is always eating her broccoli and stews. If, once a week, she wants to eat cake only for a meal.....I say ENJOY! No one thinks its odd to eat pancakes for a meal. Not much diference in my mind.

In all seriousness, i do eat quite a bit of protien every day (anything from meat to peanut butter to cheese, etc).

Okay, hon. Sorry, not meant as a nag. it's the teacher/mama hen in me. Your brain needs protein and I know you're working hard this semester!

Just for moment there I thought Irish was going to wow us with a bacon cake recipe, thus fulfilling all our cake and protein requirements in one easy step.

I may not be eating it at the moment, but I am certainly pro cake. :)

I think my hormones are all out of whack lately, one day I desperately want a donut

(the soft kind with chocolate icing....) and then it's pizza and then it's pasta alfredo

and then the next day it's something else. I'd think I was pregnant if that were physically

possible..... :ph34r:

Dinner tonight: Homemade chicken soup, also Chebe and some cheddar. Chebe

definitely makes being grain free a LOT easier.... I wake up every day and remind

myself, 'At least you still have dairy. At least you still have dairy.' It helps!

Still cheerful, broadly, but a bit less smug :(

I'm going with some homemade turkey soup today.

No rice or noodles though, just vegs.

The hubs has decided he wants to lose 20 lbs. (he has a bit of "middle" from the holidays)

and since he works out religiously at the gym, it must have come from all the festivities.

Since I still need to lose my "freshman 30" (i.e. "hello, your gut is absorbing now, so watch out--oops, too late!")

looks like we're sticking to the whole 30-ish plan. One exception: the occasional bowl of gluten-free oats.

I love them, I just got them back ........ and I'm not giving them up. :D No booze, no legumes, no dairy, no other grains and no high histamine foods does not leave me with much else. to choose from, so I'm "punting" a lot.

We push on!

Ah, hormones! Tried some rice, so fingers crossed. I was going to reintroduce Friday, so not a very clean day to try, but with 2 little ones due home gotta do something....

I think I will try gluten-free oats in a few weeks, I would love those back. Really pleased for you IH.

You folks here never cease to be an inspiration. Your stories of strength and recovery are amazing. (I can always blame the hormones for gushing a bit...)

Not sure if us dinosaur types are inspiring---- or just plain stubborn and unwilling to accept NO! for an answer. <_< :lol: In my case, I go by the "plan B, C, D or even E" rule in life

BTW: I noticed you added the Albert Einstein quote to your sig line. We're fans in this house.

      So I've been dealing with chasing the name celiac because of my body actively dealing with health issues related to celiac though not eating. Diagnosed in 1994 before foods eliminated from diet. After 25 years with former pcp I googled celiac specialist and she wasn't because of what ive been through. I wanted my results to be sent to my pcp but nothing was sent.I have email copies.I did one zoom call with np with team member from celiac specialist in Nov 2025 and she asked me why I wanted to know why I wanted the celiac diagnosis so bad, I sad I don't, its my life and I need revalidaion because its affecting me.KB stated well it shows you are.I asked then why am I going through all this.I was labeled unruly. Its been a celiac circus and medical has caused anxiety and depression no fault to my own other than being born with bad genetics. How is it legal for medical professionals to gaslight patients that are with an ailment coming for help to be downplayed? KB put in my records that she personally spent 120min with me and I think the zoom call was discussing celiac 80 min ONE ZOOM call.SHE is responsible for not explaining to my pcp about celiac disease am I right?

      I've noticed with my age and menopause my smell for bread gives me severe migraines and I know this.Its alarming that there are all these fabulous bakeries, sandwich places pizza places popping up in confined areas.Just the other day I suffered a migraine after I got done with my mri when a guy with a brown paper bag walk in front of me and I smelled that fresh dough bread with tuna, I got a migraine when we got home.I hate im that sensitive. Its alarming these places are popping up in airports as well.I just saw on the news that the airport ( can't remember which  one)was going to have a fabulous smelling bakery. Not for sensitive celiacs, this can alter their health during their travel which isn't safe. More awareness really NEEDS to be promoted, so much more than just a food consumption!FYI I did write to Stanislaus to let them know my thoughts on the medical field not knowing much about celiac and how it affects one.I also did message my gi the 3 specialist names that was given on previous post on questions on celiac. I pray its not on deaf door.

      I used to be able to get the Rivera yougut i havent been able to get it lately. I like getting it did say it did say gluten free. I just looking for a good yogurt that gluten free that i can add some fruit and nuts to any suggestion would be helpful  thanks
