When you are looking for your Florida place, maybe you should get some property or a triplex for a Celiac South Complex? We can get one in Colorado for summers and skiing. Heck- Colorado would be south for those two!

We STILL have a solid three feet of snow in our yard, more elsewhere.  It just doesn't stop snowing!

Three feet!  When does Spring arrive there?

 

We are going out this evening!!! Housewarming for some young friends - I'll bring something for me and hubby is happy to have someone else cook for him.

 

Tomorrow will be creamy garlic enchiladas with the left over meat from the crock pot carnitas yesterday.

Yes - at least three feet in our yard.  The snow is piled far over my head in many places (from shoveling driveways, etc.).  It is thigh high in the park and I am SICK AND TIRED OF IT.  This is later than normal.  Usually about now most of the snow is gone but we keep getting more and more.  It is in the forecast for tonight yet again.  BLECH!  :angry:

Ooooohh, gives me shudders first thing in morning... hubs did shopping and cooked for me last night.  I cut into my pork chop and said "Are you sure this isn't brined pork?:  He said he was sure.  So I had a bite :unsure:  and said "Are you SURE?"  He goes to look at wrapping, starts reading INGREDIENTS!!  I say that pork shouldn't have INGREDIENTS!!  Yep, pork loaded with soy!! ooh, ooh, ooh.  Climb stairs as quick as my breath will let me searching for Lectin Lock :huh:  - feel okay this morning :D :D

 

Hope you shovel your way out from under all that snow.  Egads, it must melt sometime soon.

Tonight was leftover pork roast with some garlic taters. There were veggies to go with it for me, and some mac & cheese. Other than cutting up a tater and throwing it in the oven, dinner was 100% microwavable. It was that kind of day. The good news is that I'm still semi-vertical-ish. Tomorrow will be a better day.

I know the plate is missing veggies, but we started off with a kale soup made with homemade chicken broth, so I can be forgiven!

We had chicken tenders dipped in egg and a little bit of almond milk first and then dipped in gluten free breadcrumbs and romano cheese.  Season with some salt, pepper, paprika and garlic powder and sautee in olive oil and butter.  A favorite.

CP,  you're still new here, so you are just beginning to see what she can do.

 

Our Love2 ...oh, she does not just "cook", nay,......she weaves magic!

She makes people drool uncontrollably on their laptops. 

Legend has it that she once caused a mass migration of nomadic people to walk through 3 feet of snow, following the wispy curl of heavenly aromas right to her doorstep.

Some of us have actually plotted to go up and kidnap her and make her the queen of our G F cult. so we can

live happily ever after, eating ourselves silly. It's just that none us really want to trudge through all that damn snow.

Traveling for a lacrosse tournament -

Last night - ham & cheese & spinach on canyon bakehouse San Juan bread and black pepper potato chips in the seats. Later Pinot noir , dark choc and Parmesan crisps from WF.

Tonight - chicken taco salads while watching. A Go Picnic for lunch. Breakfast - 2 hard boiled eggs and strawberries. Snacks - chips, Carmel corn, grapes, hummus with pretzel sticks.

Thought it might help someone to see how to eat and travel. Didn't know this motel had microwaves and fridges or I might have done something different.

I thought that the Udi's bread traveled surprisingly well for us last month. Did not get stale, I kept it in the fridge.

On the road is "do-able" now.

The Jif on -the- go cups, crunchmaster crackers, apples and celery sticks worked well.

Some Chobani cups and bananas for breakfast.

The Koolatron cooler in the car really helped (as did the fridge and micros in the motels). But if you find yourself stuck w/o those, it can still be done.

One hotel gave us a "welcome bag" in the room. It had bottled water, M and Ms , a granola bar and cheezits in it.

I ate the M and Ms. :) Hubs ate the granola bar (and we left the cheezits behind with a little thank you note to the manager).

When I review hotels on Trip Advisor, I keep saying the "free breakfasts" are great for traveling families, and I add nicely, but I cannot partake as I have Celiac, so I appreciate the fridges and the micros in the rooms so I can carry and store my own food..

Two managers wrote a reply" "we're hearing more about gluten free options and we're working on this".

That would be nice. Not sure they make small boxes of gluten-free Chex, however (J likes those!) ....LOL

I think she is actually onto our plot, which is the reason she lives up in all that snow. Mere self preservation. She'll leave as soon as the snow is gone, flying away like a little bird, out of our reach for the summer.

 

I have my beef macaroni, which I swear isn't a casserole in the fridge that I can have for dinner. I have no idea what my husband will eat. I suppose I'll figure something out. I just sort of did a fly by night thing with the "recipe" and everything turned out great. Next time though I think I'll put a bunch of vegetables in it since my husband won't eat it anyway. I had a zucchini in the house, not sure why I didn't just cut it up and add it other than not thinking of it at the time.

Perhaps you can kidnap her at the airport on the way back from Croatia??? (let her have her holiday first, she will need to rest up before cooking for this greedy bunch :D )

  Yes, of course, we should give the poor girl some SUNSHINE and restorative rest.

Might have a bit of vanilla ice cream.

 

That's  a Sunday night thing in our house since I was a wee one.

It used to be a "Sundaes on Sunday" tradition  with my Daddy --we are a family of ice cream whackos and

fortunately, I married an ice cream lover , too ! we make our own sometimes--and it carried over to just a few years ago. Those can make one a tad chubby. :unsure:   and my thighs think I do not need a sundae right now.

So, if I see a group of starved-looking greedy celiacs at the airport with ski masks and nylon stockings pulled tightly over their faces I will know what to expect.  Don't forget the black sedan getaway vehicle.  And don't forget to look inconspicious!  If not, I just might figure it out!  :lol:        :ph34r:

      So after  a long time in which I got my zinc and folic acid levels back on track I will now start with taking Thiamine to see if that does anything. According to my blood levels I'm not low on Thiamine but, if I understand correctly, blood works are not the best way to find out if there is a Thiamine shortage. How much Thiamine should I take to start with? 100 mg?

      I'm in the "never reveal your plans to the enemy" camp on this one--it's none of their business if you're looking for another job, so I would leave that out of any conversation. Also, retaliation can be common with some employers, especially if you bring up the ADA and claim a disability because of celiac disease. I was a corporate paralegal for 5 years and handled employment claims against some major USA companies, and I've seen it all--even by huge companies that contract with the government and should know better. I say keep your cards close to your vest, wear an N95 mask if you handle wheat flour, and quietly look for another job if you feel you can't continue there.  Oh...

      This is so very interesting I love all this information, knowledge is so very important for us to help ourselves heal, I have been so wrapped up with my dogs nutrition after vets told me she needed a operation, which turns out I can help with this for her  myself also , I may have been missing the tap on the shoulder to say integration into your own health is needed here too , although I have been aware I must admit myself has been on the back burner at times , I also have a granddaughter with nut allergy I researched for that , this is now screaming at me to turn inward to myself also , and deal with my invisible struggles I also am carrying, thankyou for all the information keep it coming...
