The kids have a snow day...they are so excited to go sledding! I'm making chili in the crock pot and corn bread to go with for dinner to warm everyone up.

Braised beef in the dutch oven covered in a layer of onions and garlic w/ thyme, a layer of sliced potatoes w. EVOO and rosemary and a grating of parmesan, a layer of sliced whole tomato from the can, repeat layers... shove it in the oven for 4 hours. :D

Just finished a marinara sauce for French bread pizzas dinner. I still need to bake the bread. I will make cheese ones for the 2 younger kids, the works for hubby and my oldest and a caprese...light on the mozzarella for me. I've just started dabbling in a bit of dairy. I'll make a big tossed salad to go along with.

These were a huge hit with all! I was asked to make them again and one of my boys asked if he could have the recipe when he's grown up and has his own house. Lol!

Tonight I'm making chicken enchiladas and cilantro lime rice.

"Rosemary Baby" Grilled Cheese (Muenster cheese and home made apple butter with fresh chopped rosemary on gluten-free rice blend homemade bread) and some Home made roasted tomato creamy soup.  oh its smelling so good. I cant wait for the man to get home from work so we can dig in.

swedish venison pot roast in the crock pot (kfg :) ! )  mashed taters, carrots.  

 

made chocolate chip cookies from the atk cookbook yesterday - used domato (donato?) flour and didn't realize it already had xanthan gum in it, so they are super chewy <pretty tasty, actually)  i like them a little flatter, but they're still good.  

 

a word of advice:  those cookie dough fundraisers (this particular company is 'classic cookie') are now offering gluten free chocolate chip dough.  don't bother unless you like crunchy dirt  ^_^  also, manufactured in a facility that processes peanuts, treenut and wheat products (but they don't tell you that until you get the container - it has a disclaimer sticker on the lid...   <_<  )

Good info on the cookie dough.  At least Celiac gives me a reason to turn down all those overpriced fundraisers I am asked to buy from, LOL.

I am eating a chunky monkey cupcake from my favorite gluten-free bakery.  Chocolate, Peanut Butter, and Banana. Pretty good!  They also had eclairs, first one I have had since DX.

I have three in the freezer.  The point was to forget and eat later but I may have to pull one out, lol.  I forgot to thaw anything out for tonight so... hamburgers maybe, or chicken nuggets and tater tots, for tonight.  Will see how I feel!

OOo I made the house some lasagna last night.

 

Switched out regular pasta with the Tinkyada lasagna noodles. oh my!!!

 

I followed some online suggestions instead of the box directions. I only boiled the noodles for about 2 minutes then too then out and lined them on the counter. I ran then through my olive oiled fingers so they wouldnt stick to each other or anything.  I used two boxes, and had 3/4 of a box left over (which I broke up and used to make and freeze a cheaters lasagna pot). It takes 4 noodles across and one on the end for each layer. There are 16 in each box.

I did make my own marinara, although I've used jarred as well. I make the bread crumbs too. I also use more butter and mozzarella than listed. Lol! I guess is just a guideline more than a recipe at this point. For noodles last night I used Ronzoni. Everyone loved it!

My homemade sauce is pretty thick/dry -so I add a little extra water. Jarred sauce is usually wet enough to cook the noodles.

Yeah I normally keep mine sauce super dry too because I usually use it for spiralized noodles but I added some water to this for the noodles to absorb. :D

      Thanks! I think I'll start slow. See what happens. Should I notice the thiamine working almost straight away if I'm really deficient? What kinda of difference did you notice? More mental? Of also physical in the sense of more energy?    Sorry for all the questions!

      Absolutely no danger of overdosing on the stuff.  Thiamine is nontoxic, and safe.  I had gotten to 1000 mg of Thiamine HCl a day at one point.   Do continue taking the multivitamin with the other B vitamins.  You may want to add a magnesium supplement because magnesium and thiamine make enzymes together.  I like Magnesium l-Threonate (Neuro-Mag by life extension).  You may want to add a B Complex in addition to the multivitamin (take them at different times).  All the B vitamins are water soluble.   With Thiamine HCl, there's a "magic moment" about 500 mg, where sufficient thiamine can get into the cells by passive diffusion, and the difference is amazing.  In thiamine insufficiency, the thiamine transporters (special gates into the cell) shut down.  Thiamine cannot get into the cells until there's a higher concentration outside of the cell.  Once that happens, the  thiamine can get through and go to work inside the cells.   If you're brave, start with 300 mg at one meal and 200 mg at the next meal.  Increase as you feel comfortable.  You may want to stay at one amount for a few days before increasing again.  Just keep adding another 100 mg as long as you keep feeling improvement.  If you feel uncomfortable, skip the next dose.  Thiamine HCL is water soluble and excess is easily excreted.  Don't take thiamine close to bedtime because you may feel too energized to sleep.   Thiamine HCl may feel like riding in the back of a pick up truck on a gravel road.  Benfotiamine feels like you're in a chauffeur driven Rolls Royce.  TTFD feels like you're driving a Lamborghini.  You'll get there no matter what kind of thiamine is taking you there.  Just keep taking it.  The health improvements can be very subtle, but you'll notice in the long run.   I started with 500 mg of Thiamine HCl, to see what would happen and had amazing improvement within an hour.  I took 300 mg with each of two meals and 100 mg with snacks.  I eventually added in Benfotiamine (250 mg  a couple of times a day) and reduced the thiamine HCl.  Later I added in TTFD (50 mg) several times a day.  Just experiment and see what feels right for you. Everyone is different and has a different level of deficiency.   I kept having additional improvement with each type of thiamine.  I've taken thiamine for almost fifteen years now.  I still take all three kinds on maintenance doses.  You have to experiment and see which ones work best for you in which combination.   I'm right here if you need anything.   You'll be fine.

      Thanks so much for your replies! no danger of overdosing on the stuff? or having the other B levels going out of whack? I do take a multivitamin with all te other B vitamins at the RDA level. I have bought the HCL version of Thiamine. How long do you need to use the Thiamine? a short periode on high levels and then back to a maintenance dosage?

      Kudos for trying thiamine! On the ingredients label it should say if it's thiamine hydrochloride (thiamine HCl) or thiamine mononitrate or something else.   Thiamine mononitrate is shelf stable and not easily utilized in the body.   Yes, go ahead and try a whole 100 mg tablet.   Take with a meal.  Don't take close to bedtime.  Tomorrow take a 100 mg tablet with two meals. The next day take two 100mg tablets at one meal and 100 mg at second meal.  Keep increasing in this manner as long as you notice improvement.   When I first started with thiamine hydrochloride, I felt like the lights in my head were being turned on floor by floor like in a tall skyscraper.  It's just the brain working properly with sufficient thiamine.  I worked up to 1000 mg a day.  Lots if tablets.  Benfotiamine and TTFD are stronger and are utilized easier, so not as many milligrams ate needed.   I'm happy to answer any further questions!

      Hi, My 3 year old was diagnosed a couple months ago. We went gluten free, very strict, and everything improved. Energy, no more meltdowns, bad rash is mostly gone. She's doing great. Except she complains every day of stomach pain. She describes it as squeezing. Any ideas from anyone?  We cut out oats and it didn't make any difference. She doesn't drink milk, though she has cheese. It doesn't seem to coincide with the cheese. She says it hurts when she wakes and then other random times during the day.  We are SO strict with her food. We don't eat out, out whole house is gluten-free. I make everything from scratch. She eats very healthy. She's not picky and we do tons of fruit, veggies, meat, etc. we don't do a lot of processed food.
