  1. I just have one thought - please forget about any testing and take your son gluten free immediately. You do not need any tests to know what is wrong with him - if you want to save his life - change his diet. My grand daughter also got a negative thru Enterolab when she was 7, she is 9 now- she is double DQ1 & her parents thought oh, JUST gluten intolerant...
  2. How much gluten-free grain products are you eating? have you tried cutting out dairy? are you taking B12? are you anemic? had all your vitamin & mineral levels checked? blood pressure checked?
  3. I think kids with autism have a problem with the texture of foods. how about boiling some chicken then pureeing it in the blender with some chicken broth. Cook some veggies in the broth like carrots, broccoli etc. & puree the whole thing. Add the chicken puree to the veggie puree & pour through a large tea strainer. This makes the most delicious...
  4. There is no such thing as growing pains. I had those leg pains as a child, but it was because I cannot eat wheat, rye, oats, or barley. I was also anemic. We were also poor & did not have medical attention, & my mother said that I just had growing pains. I have double DQ1 genes, so am classified as gluten intolerant. I found out I was severly...
  5. I have had the same experience that oceangirl has had, I have been gluten-free for 3 1/2 years now, & wheat lite for 10 years before that & barley & oat free for 30 years. So I think that if you are totally gluten free etc for awhile you might heal up & be able to add back in some foods later. for now I suggest baked sweet potatoes. ...
  6. Lets see I think the original poster said that she already had the test done thru Enterolab. to the orginal poster, re the double DQ1 genes, please keep those kids with double DQ1 totally gluten free & do not try messing around with giving them gluten. I say this because I am VERY familiar with the double DQ1 genes as I have double DQ1 as does most...
  7. "Brother with Celiac, aspergers...his tests were all negative (he didn't have genetics done), including endoscopy, but he definitely is at the least gluten intolerant...highly suspect my mother has it as well- she has hyperthyroid, fibromyalgia, hemochromatosis, and now colon cancer, and she has been weak and exhausted and just generally sick. She's going...
  8. For people that are in pain, I suggest a grain free diet, if you have already gotten rid of the other common food intolerances, like gluten, soy, dairy, nightshades, going grain free should get rid of all your pain. Most all those gluten-free grains have some level of cross contamination, plus you could just be reacting to that grain. I have learned if...
  9. I have recently had a problem with rice. You know they have genetically altered rice, so it is not the same as we used to eat. I do not eat rice or rice flour. I also cannot eat soy flour, tapioca flour or bean flours, or potato flour. For baking I suggest you try various combinations of sorghum flour, almond flour, corn flour, coconut flour ...
  10. I replaced or tossed almost everything. Except my pans I only used stainless steel, so kept those. I tossed the stainless steel cookie sheets, the bread pans, the wooden spoons, cutting board, the rubber spatulas, the rolling pin, the mat for rolling out pie dough, the flour canister (it was a rubbermaid container). I got all new tupperware type containers...
  11. Silk, would you consider renting out your husband??? re diabetes, there was an article in the Houston Chronicle last week about a study on diabetes that had to be halted because they found that a diet extremely low in sugar caused an increase in heart attacks. You should check out the new research on diabetes, maybe you could google it. I also recommend...
  12. AliB I agree with your post. I am double DQ1, which is gluten intolerant. I was born sick & was my son & his son. I suffered through a childhood of problems on into adulthood, when I discovered that there was something called food allergies. I am 61 so of course 40 years ago no one believed in food allergies, they thought it was all in your head...
  13. I would email Dr Fine to see if he would write you a script for a gluten-free diet. Also can you get them another doctor? retirement homes are the absolute worse, when it comes to food. I talked to a lady that worked at a retirement home , she was at a celiac meeting as support for a friend & after talking to her she was going to get tested. She...
  14. Jeanbean, if you do not have a problem (& have no symptoms & feel wonderful) with dairy & love it then do not give it up. If you have not been gluten-free very long and think that you do have a problem with dairy, it could be a temporary situation. I have no desire to eat lasagna anymore. I am mostly grain free, but that is just me. ...
  15. that is the common misconception that whole grains are healthy, which they are not. I suggest as a start a couple of books, "Dangerous Grains" & Good calories Bad Calories". gfcookie, how long have you been gluten-free? Do you have children?
  16. Mom23boys, just wanted to congratulate you for taking good care of your family. yes, everyone on the planet Earth would be healthier in mind AND body if they would not eat grains and processed foods. & I also differ with the poster that thinks it is so rare to have 5 people in a family with a gluten problem. I think it is rare not to have all the...
  17. I think that one thing that happens about the 6 month stage is that you start adding in some gluten free replacement foods like bread and crackers & some of us cannot tolerate those things. I do not tolerate most foods that are processed & eat none of the mixes for things like bread etc. I cannot tolerate tapioca flour, soy flour, bean flours...
  18. well if there are other problems it is obvious that the doc did not find them & is just going to give a med. I hope that you do not give your child the med & will start the child on a gluten-free diet right away. I also hope that you will get the child a gene test, if not more testing, thru Enterolab.com. see post about gene testing, about...
  19. yes, & if you have a double copy of any of those gluten intolerance genes it is worse than if you have a DQ8 or a DQ2. Just ask those of us that are double DQ1... & if you are double DQ2 you are at a greater risk for T-cell Lymphoma. Here is a quote from an article on this site. "HLA-DQ2 homozygosity means that a person has inherited the...
  20. Stacey, you probably have at least 1 DQ1 gene, I have 2. DQ1 is notorious for depression & other neurological problems. I do notice that if I get a very mild cross contamination sometimes I get the depressed feeling or a feeling like I could just cry... I take B12 every day, 5,000mcg IF I miss my B12 I can tell it. My whole mood changes. I suggest...
  21. Hello, I will just chime in with my opinion that the combination of the soy & the dairy is doing you in !!!!! Definitely do not eat the soy... Soy is really not good for you. & yes, dairy is the hardest thing for us to give up. If possible I think dairy is more addictive than gluten. If I were you I would totally give up the dairy even...
  22. Some of us cannot tolerate tapioca flour - which is in almost all gluten-free mixes, next would be soy flour, bean flours, & potato flour. If I might suggest that you go grain free for awhile. If you can tolerate corn, try some of the white corn tortillas as a bread substitute, but do not eat them everyday. I cook with coconut milk, coconut oil,...
  23. Some of us eat a version of the Paleo diet. Paleo is no grains, no sugar, no dairy, no potatoes, no beans, no peanuts which is a legume & no rice which is a grain. I eat a lot of meat & seafood & fruits & veggies & nuts. Paleo is also about getting enough fats in the diet. I recommend the book "Good Calories Bad Calories" I am...
  24. Dear Holiday16, since your son has a heart condition, please get the book "Good calories Bad Calories" by Gary Taubes. Everything you think you know about heart/cholesterol/insulin/ the liver and diet is outlined in this book with the research that shows how the "authorities" came up with those "guidelines". Please Please get this book & read it &...
  25. Hello, well glad to hear you are going to Tahoe. There is a PF Chang's in Reno. In South Lake Tahoe there is a fish & chips place called Freshies, everything is Gluten Free. the Chart House is excellent, I have eaten there a lot, the salad bar even has caviar, you can get anything grilled, baked potatoes, shrimp cocktail that type of thing. Any casino...
